Banana Banana Bread

I've made this recipe many times, as-is, and it turns out a very moist, heavy loaf. I've been told by guests that it was the best banana bread they ever had. No complaints here!

Speedy Oven Fudge

It's very good, and easy. I recommend sifting the powdered sugar, since you end up with lumps if you don't.

Homemade Flour Tortillas

I changed this A LOT. I didn't have any cornmeal, so I used Italian-seasoned bread crumbs. I left out the chili powder but used all the other spices. As some other commenters suggested. I fried it up in a pan with just some spray oil, then baked it. It then occurred to me that with the Italian seasonings and bread crumbs, maybe pasta sauce would be a more appropriate topping than barbeque. So that's what I did, and it was FAB. My husband said it was just like eating lasagne. I felt like I was eating cubes of ricotta, and my subconscious starting telling me I would get fat! But no, it's just tofu. Delish!

Raspberry Almond Shortbread Thumbprints

This was just delicious. I think I gained a few pounds because I couldn't stop eating them. I made them with apricot jelly instead of raspberry, and it was delicious. They came out a lot bigger than I wanted, though. Next time I'll make the balls of dough really small.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was a good way to use chard -- light yet hearty. I used significantly less olive oil, an entire can of garbanzos, an entire can of diced tomatoes, and added a clove of garlic. I also used leeks instead of onions and shallots, because that's what I had on hand.
