Super Easy Chicken Fingers

ok, heres the deal on this one. I was so glad i read the reviews before i cooked this. I really changed the whole recipe, but this was a great "staple" recipe. I used egg whites, instead of butter, (you know, those pesky fat and calorie things)used crackers and ranch style croutons (like someone else suggested) and cooked them 10-15 minutes at 425 on the top rack. I also tenderized the chicken breasts before i cut them up. I did not have a soggy piece of chicken, on either side, these were super crunchy. My WHOLE family said these were the absolute best, and when the WHOLE family agrees, you can bet it was good!

Ranch-Style Buttermilk Dressing

OK, i love ranch on everything, from bread to steak, but i absolutely hate the overpowering buttermilk taste a lot of restaurants have. So, I have to tell you, this is an absolute GREAT recipe for Ranch. this has a perfect blend of seasonings, and a MILD (which i prefer)taste of buttermilk. I would only suggest to watch the amount of dill, because dill alone can overpower anything. My whole family wanted to drink this by itself!

Honey Mustard Dressing II

SUPER FANTASTIC - no changes. My son, who HATES mustard or anything like it, says this is better than Ranch! I wish I could give it more than 5 stars!

Baked Potato Salad I

Simply fantastic!! I have already made this several times, because people ask for it. Sometimes I split 1/2 sour cream and 1/2 mayo, and either way, its still just great!!!

Jamaican Jerk Chicken

After coming back from Jamaica, we were looking for something that was similar to what we had over there. This was good, but it was not true Jamacian Jerk chicken, at least not what we had. All in all, it was edible, and ill make again, just not what were expecting.

I am sure the recipe was fine, but dont even attempt if you dont have something like a kitchen aide. I burned up a mixer and wasted two batches, and it still never made.

Herb Rubbed Sirloin Tip Roast

Well, I personally thought this was fantastic. My husband - not so much, but only because he likes his meat way to done. As a previous person suggested, I cooked the sirloin in the oven for 30 minutes, then I broiled the silrloin for an additional 30 minutes. To me the meat was well done, but my husband could see "flecks" of pink. The taste was very good and my kids liked it too. My husband wont eat this again, but I will find a way to have it another time! :-)

Blueberry Pie

Ok, this was my very first fruit pie, and I enjoyed it very much. My husband and dad LOVED it. The only thing - if I may, is I dont know how much I liked the consistency of the filling. After reading the reviews, I decided to use 4 TBSP of cornstarch, and dont get me wrong, it was very good, but kinda Jello-ish near the crust area. I will definitely make this again, maybe using 3 1/2 TBSP of the cornstarch.

Hudson's Baked Tilapia with Dill Sauce

My husband liked this quite a bit. I didnt use the cajun spices, just salt and pepper with a tad lemon. The dill sauce was very good.

Well, the chicken defintely needs to be cooked a lot longer than 5 minutes, unless you like your chicken pink (UGH). I will try one more time with the chicken well done, and then well see if it is the same.

Blueberry Sour Cream Coffee Cake

This really didnt pass my usual greatness test - and not because of the recipe, but my own doing. I did not use enough flour, and the cake came out a little too "spongy" for my taste, although my son and husband loved it. It looks pretty (see picture), and I will have to give it another whirl...with more flour.

To Die For Blueberry Muffins

These were a big hit. My dad said they were the best muffins ever. The only difference I would make, is instead of using cooler butter and "cutting" it into the topping mix, I will use melted butter, and maybe a tad more too. I had too much dry mix for the tops left. Not complaining though... Very good.

Good Old Fashioned Pancakes

These are the most AWESOME pancakes ever! Now, I read somewhere that in order to have the maximum fluffiness for the pancake, instead of the whole egg, you beat the egg white unti it has a stiff peak in a seperate bowl. I did that, and then I folded it into the batter right before I put it on the griddle, and I added fresh blueberries, after putting the batter in the pan...This is a must have recipe, and absolute FAVORITE in my house...no more pre-mixes for us! THANK YOU!!!!

Easy Garlic Broiled Chicken

Ok, I did not have a broiling pan, all of mine were apparently not broil friendly, but i cooked it on 350, and it took a very long time. Overall the taste was ok, but once I find a broiling pan, I will try it again, because the taste was good, just not great, and im sure it was because of having to cook it versus broiling it.

Santa's Favorite Cake

I took this to my husbands work, and EVERYONE loved it. My husband said it was one of the best cakes he ever had. A very easy recipe, and easy to follow. I did use real butter, like someone else suggested, and I noticed that if you use 10-14oz of the powered sugar and not all 16oz, the icing wont be hard. Also, I know the main thing was the peppermint extract, but I had to leave it out, since i was afraid that not everyone would like it. Again - fantastic recipe!!! Im already getting requests to make it again!

Pam's Glazed Meatloaf

I changed a few things, only because of what I had on hand. I used about 1/2 cup of dry, minced onions, and Italian bread crumbs, and added garlic like someone else suggested. Then, I had ran out of Reynolds wrap, (imagine that) so I put the mealoaf in a pan, and it still turned out really good. All in all, I really liked the taste, although the glaze was a bit too sweet, for me.
