Oven-Fried Pork Chops

Tasty and easy. The kids like it because it's breaded and I like it because the main course is ready in under thirty minutes, and the meat stays moist and tender. I've also used chicken in place of pork. This freezes well. I have frozen before and after cooking. First I freeze it in a single layer on a cookie sheet, then wrap it in foil and put the chops in a plastic bag. Then I thaw overnight and either cook as the recipe indicates if I froze them raw, or heat it in the oven for about 15 minutes if I froze them cooked.

Roasted Vegetables

This is what people ask me to bring to holiday dinners every year. It takes a while to prep the vegetables, so I do that the day before roasting, or roast one day and reheat the next day to serve. It's a fantastic blend of flavors. Sometimes I've omitted certain ingredients but it's really not as good unless I follow the recipe exactly. I like to make this recipe at the beginning of the week and heat it up over cooked brown rice as my lunch. It's quite filling.

Ultimate Twice Baked Potatoes

This is one of my favorite comfort foods. I took off a star because when I measure according to the recipe, the mixture is too runny for my tastes. I cut down on the sour cream. This freezes well, too. After refilling the potato skins, I put the potatoes on a baking sheet in the freezer until they're solid, then I wrap them in foil and package in a gallon-sized ziplock bag. Then I thaw as many as I want and bake once thawed.

Chocolate Peanut Butter Pie

Yes, it is jaw-tighteningly sweet, but so delicious that I'm willing to ignore that. It's easy to make (my 8 year old has made it completely on her own) and goes over well when served for dessert at family dinners.

Real Hummus

Great recipe. I make it at least once a month and put it in my kids' and husband's lunches along with pita chips or carrot sticks. I don't bother with the garnish unless I'm serving it at home. I find the recipe to be very forgiving and don't take the time to measure if I'm rushed. It tastes better than what I have purchased at the store and is a whole lot cheaper to make than it is to buy.

Apple Turnovers

They tasted great, but I'm not entirely sure they were worth the trouble! I will probably try it again, keeping in mind that: - I had a ton of leftover apples because they wouldn't fit in the puff pastries - Even after repairing tears in the puff pastry sheets, the liquid from the apples leaked out and made it very difficult to get them off the baking sheet without breaking them - The apples could probably be sliced and then the slices cut in half in order to help them fit in the pastries better They tasted GREAT, though.

Strawberry Dream Cake I

This cake was amazing. The first time I made it I didn't have quite enough white chocolate so I used 4oz instead, and it still turned out fine. It was made for a coworker and everyone loved it. My children have requested it with different types of fruit on top. Thanks for the recipe!

Florida Strawberry Muffins

I followed the recipe exactly and it was amazing, both fresh out of the oven and after being refrigerated overnight. The whole family enjoyed them. I made another batch in mini-cupcake tins and froze them for another day. This is a perfect way to use up strawberries that have passed their prime when you don't want them to go to waste!

Sweet and Sour Drumettes

This meal is going to be part of my regular rotation. I could not believe that such a short recipe yielded such an AMAZING meal! I doubled the recipe so I could use it for chicken drumsticks instead of drumettes. In the future I will turn the chicken halfway through cooking to make sure it is completely covered in the delicious sauce. It was a big hit with my children, ages 18 months through 9 years - my normally picky daughter asked for more, as did my toddler.

Isaac's Juicy Chicken

This was a big hit with the adults and kids around our table. Neither my husband or I could taste the ranch dressing, but maybe it helped anyway, because the chicken was incredibly tender. The meat was finished about ten minutes before I was ready to serve it, so I put it back in the oven with the heat turned off. This may have caused it to get slightly overcooked (it was still hot in there), but the chicken didn't lose its tenderness or great taste. This recipe is definitely worth making again. Next time I'll cut the bread crumbs, as other reviewers suggested - I couldn't fit an entire 2 cups in the shallow bowl I was using so I had maybe 1 1/2, but I still had a lot left over after dredging 9 chicken thighs in it.

Seven Layer Dip I

Wow, AMAZING!!! This was a HUGE hit at a recent barbecue. I am not a big fan of this type of food, but I thoroughly enjoyed this! Having had it both ways, I agree that it is better at room temperature (and it's easier to scoop when it's not cold). The guacamole added such a fresh taste to this dish. I will definitely make this again, this recipe is a keeper.

Chicken Oreganato

Two words: juicy, delicious! I might experiment with some other seasonings because although it did have a heaping helping of oregano, that flavor didn't really do it for me. I might add some more lemon, too. All in all this is definitely a meal I would make again.

Juicy Roasted Chicken

I was floored by this chicken. WHY was it so good?!? Even the white meat was incredibly moist and delicious. I have never seen my kids vacuum up chicken so quickly; one of them didn't even like chicken until I put this on their plate! I didn't have celery and I used butter instead of margarine. My chicken was 7# and of course I can't remember how long it took to cook, I just set the timer for 2 hours and then checked the temp until it was done. I served with stuffing w/ apples and onions and it was a huge hit. Thank you!!!

Oven Fried Chicken II

FABULOUS recipe with delicious results! I did everything according to the recipe with the exception that I only had 8 pieces of chicken, not 12. Next time I'll use less flour and less breadcrumbs because I think there would have been a lot left over even if I had used 12 thighs. Everyone in the family loved the chicken, from my husband all the way down the line of 5 kids to my 2 year old. I will definitely make this again!

To Die For Blueberry Muffins

These are almost unbearably delicious! I have never made muffins from scratch before and I'm sure I made a few mistakes, but the muffins still came out wonderfully. My husband raved about them and it was hard to convince my kids that they should only eat one. I would love to test this with bananas and nuts or other fillings, but I doubt I'll ever try another base recipe!

Alfredo Sauce

The Parmesan didn't melt well and it was very lumpy and unappetizing. I think I prefer premade, jarred alfredo sauce to this. I have made alfredo sauce in the past that turned out beautifully so I don't think the results were my fault, though they could have been. Either way, I won't be making this again and will go back to another recipe.

Italian Spaghetti Sauce with Meatballs

I don't care for spaghetti, but my husband and kids love it so I make it every once in a while. Now that I have found this recipe, I might do it every week. It is preposterously good!!! Like others, I was hesitant to cook the meatballs in the sauce, but I'm glad I followed the recipe as written. When my husband got home and tasted a meatball, he was raving about how delicious it was: evenly cooked, not falling apart, and restaurant-quality (a big compliment coming from him!).

Beaker's Vegetable Barley Soup

I am adding this recipe to my regular circulation. I thought it was delicious. I had to make a few adjustments: I omitted Worcestershire sauce to make it vegetarian, I omitted tomatoes because my son has an allergy, and I omitted curry because I didn't have any. I thought the tomatoes would have been a nice touch but even without them, this soup was outstanding, and had the perfect consistency. I served it alongside grilled cheese sandwiches but really, the soup was hearty enough to eat by itself.
