My favorite things to cook
I love trying new recipes. Everyone in my family has different tastes - my son is very particular and my husband dislikes a lot of things that I love, and I like to have the challenge of creating a meal everyone will enjoy.
My favorite family cooking traditions
Every Valentine's Day, my mom makes a delicious dessert called Berries on a Cloud. I've never attempted it, but I'm looking forward to trying it someday. On St. Patrick's Day we make corned beef, potatoes, carrots, and cabbage. On Christmas Eve my mom invites us to dinner and we have Shephard's Pie, Peas On Earth, and Good Will Tomatoes.
My cooking triumphs
Several times, my father in law was so impressed with my meal that he actually started applauding at the table. If that doesn't boost someone's self-esteem, I don't know what will. :)
My cooking tragedies
When I was expecting my daughter and suffering from "pregnancy brain", I got a little mixed up while making a white sauce for pasta. I was supposed to strain out the black peppers, onion chunks, etc. and be left with a smooth white sauce. Instead, I dumped the sauce into a sieve that was over the sink. I had a sieve full of onion pieces, bay leaves, and herbs...meanwhile, my creamy, smooth white sauce was going down the drain.

Oven-Fried Pork Chops
Tasty and easy. The kids like it because it's breaded and I like it because the main course is ready in under thirty minutes, and the meat stays moist and tender. I've also used chicken in place of pork. This freezes well. I have frozen before and after cooking. First I freeze it in a single layer on a cookie sheet, then wrap it in foil and put the chops in a plastic bag. Then I thaw overnight and either cook as the recipe indicates if I froze them raw, or heat it in the oven for about 15 minutes if I froze them cooked.

Roasted Vegetables
This is what people ask me to bring to holiday dinners every year. It takes a while to prep the vegetables, so I do that the day before roasting, or roast one day and reheat the next day to serve. It's a fantastic blend of flavors. Sometimes I've omitted certain ingredients but it's really not as good unless I follow the recipe exactly. I like to make this recipe at the beginning of the week and heat it up over cooked brown rice as my lunch. It's quite filling.

Monte Cristo Sandwiches
