Salmon Fillets with Mustard Glaze

Reviewed: Jan. 7, 2009
I also accidently added more brown sugar.. 2 tablespoons instead of 2 teaspoons, still was tasty though. I also added a splash of Chardonnay. I also drizzled the glaze over fresh spinach which went perfect with the salmon

White Chocolate Chip Oatmeal Cookies

Reviewed: Jan. 15, 2009
My 1st bite.. I was in heaven! These cookies are perfect! I did omit the pecans since I'm not a fan of nuts. I also reduced the white chocolate chips to 1 1/2 cups and it was sweet enough.

Seared Salmon with Balsamic Sauce

Reviewed: Jan. 8, 2009
This was just okay... the balsamic vinegar was a bit too much, I would reduce it. The Salmon Filet with mustard glaze recipe is better and also has a bit of balsamic in it.

I also doubled the peanut butter. Very light and not to sweet which was perfect for me. I added a pinch of cinnamon to the batter also.

Blueberry Drop Cookies

Reviewed: Jan. 27, 2009
These were delicious! I love almond flavored everything. Which was awesome when I saw Almond Extract as one of the ingredients. I actually halved the recipe because I only had half the amount of blueberries.. but I kept the amount of 1 teaspoon of almond extract & added a teaspoon of vanilla extract, they turned out wonderful!

Pan-Seared Chicken Breasts with Shallots

Reviewed: Jan. 15, 2009
Love the flavors of the shallot in the white wine. To make it a bit healthier I only used 1 T of butter with the olive oil. Omitted last 2 T of butter. Spooned out some of the sauce into a small bowl and mixed with a teaspoon of cornstarch and added it back into the mixture.

Strawberry Cheesecake

Was told this recipe is of restaurant/bakery quality! Did not have strawberries on hand, had a bag of unsweetend raspberries. Threw that into the food processor with a tablespoon of honey. I also added a teaspoon of vanilla in the batter.. Delicious!

Great recipe, a little too sweet for me, I would reduce the sugar a bit. Only had diced pineapple on hand, blended it a bit with the mixer. Overall it was yummmy and gone the next day!
