Day Before Mashed Potatoes

I gave it the best rating because not only was it tasty, it was so easy! My husband thought it was very good. I made it and divided it in half before baking it. I gave one half to a neighbor who had broken his ankle, and we ate the other half. But, I will make it again and freeze half of it for another meal. Versatile and delicious. Thanks, Erin!

Parmesan Herb Bread

This bread is incredible. I have made it dozens of times. The house fills up with the most amazing smells, and the taste, OH! It's good with butter/margarine, but it's GREAT toasted! And for the most fantastic grilled cheese you have ever had, spread this bread with pesto and use mozzarella. OH, it's addictive!

Easy Eggplant Parmesan

This was delicious and easy, and no frying! I didn't cook the eggplant quite long enough, though, so make sure you poke it with a fork to see if it is nice and tender before putting it in the oven. Next time I will cut them a little thinner than 1/2". Like someone else, I also let it sit for one hour salted and then rinsed it off and squeezed out the water, patting dry with a cloth dish towel. I used marinara sauce, which was great, but I think next time I'll use my favorite spaghetti sauce, with mushrooms and gr. peppers. My husband really liked it!

Orzo with Parmesan and Basil

This was REALLY delicious and very easy! I actually only made it for one since I was alone for dinner that night, and I was wishing I had made the whole amount. So good, but I did need to add more chicken broth, so I suggest checking your orzo after 10 minutes to see how fast the broth is evaporating. I actually used chicken stock instead of broth, from a box.

Easy Lemon Cookies

WOW, these are so easy and so good! I made them a little smaller and got 44 of them. I have some orange extract in my cupboard, and if I can find an orange cake, I'm going to try making orange cookies! And I was thinking about a chocolate cake mix, and adding peppermint extract or almond extract. All sorts of possibilities! But oh, seriously, these are so very good if you like lemon, and pretty too.

Acorn Candy Cookies

I made 3 dozen of these for a raffle at our synagogue's holiday bazaar, and people went CRAZY! These are so simple to put together and look so pretty. I made more a few days later with peanut butter chips, since I don't really like butterscotch, and they were even better. Next time I will try the dark chocolate kisses and dark chocolate morsels, yum! Or mint chocolate chips would be good, or, well, the possibilities are endless. Some people said they also look like dreydls, so I might try making mini sugar cookies and coloring the dough to make them more colorful, and use them for Chanukah.

Death By Chocolate V

This was AMAZING! Well, let me explain something first. I didn't make it with sugar, I made it with Splenda For Baking, since I had people who were on diets and/or diabetic. I also used fat free sour cream. It was sooo delicious, and I got such compliments! I can't wait to try it with sugar and regular sour cream to see if it's better or not. I will definitely make this many times, and I have already had 2 people ask for the recipe. Buffy, thanks so much!

Grilled Radishes

I am not a good griller and was alone when I made this, so I made a smaller amount. Plus, I did it in the microwave. They were delicious! They had a very delicate flavor, not a strong radishy flavor. I have never been a fan of radishes and have NEVER bought them before. I only ate them if somebody else had put them into a salad. I will definitely make this again!

Parmesan Crusted Chicken

I thought this was great. I made it exactly the way the recipe says, and it was so moist and delicious. My family loved it too! Made it for a food auction as well, and the person who bought it said later that she LOVED it! She said it tasted like it took me a long time to prepare!

Irresistible Whole Wheat Challah

I made a half recipe, just in case I wasn't crazy about it, and took it to my synagogue this morning (Saturday) for our small Sabbath service (our big one is Friday night). Everyone went CRAZY when they tasted this! It is super good, moist, very flavorful, with a nice chewiness to it. They asked me to make it again, and often!! I make challah for my husband (and me) every week, and he told me I could switch to this one! I did use the wheat gluten, and I didn't use raisins, since I knew there would be people this morning who don't like raisins. I will make it next Friday for our home challah WITH raisins, since my husband loves them. Thanks so much for this!!!

Chicken Florentine Rice Casserole

I thought this was absolutely delicious! I couldn't imagine what was going to happen with the cottage cheese, but it sure worked for me. The spices were just right in my opinion. It is very filling, I was surprised. And I love the brown rice rather than white. Terrific recipe!

Braised Balsamic Chicken

This recipe was just ok, but my adult son liked it; my husband said it had too much tomato. I should have used real garlic, and I should have used more pepper. I did add chicken stock to 1/3 c. of balsalmic vinegar, and I was glad I did. It would have been too strong. On the other hand, it tasted too tomatoe-y. But that's just me, I'm not crazy about chunks of tomato. I agree with someone else who said this is really good without the chicken! I used Quinoa, and it was very good with the sauce. I cut up chicken, because I had thin chicken breasts, and I didn't like the texture. That isn't the fault of the recipe, though. I think I prefer cooked tomatoes and balsalmic vinegar separate.
