Garlic and Basil Vinaigrette

As a salad dressing, way too thick...as a spread for grilled chicken, roasted peppers, fresh mozzarella and baby spinach on whole wheat hoagie rolls, absolutely delicious!!

Award Winning Soft Chocolate Chip Cookies

I followed the suggestions from SVROSS, and mixed the semi sweet chips with half white chocoate chips...absolutely amazing!! The perfect snow day activity for the kids!!

Baking Powder Drop Biscuits

Really works in a pinch when you don't have biscuit mix. Added onion powder, garlic powder and poultry seasoning to the mix. Served with beef stew...really yummy!

Banana Streusel Muffins

Delicious!!! I used half whole wheat flour, half brown sugar, 1/4 cup ground flaxseed and greek strained yogurt for the sourcream. I needed to use up some over ripe bananas and full-fat greek yogurt I bought by mistake...turned out great!! Will make this time and time again.

Smothered Beef Short Ribs

I mistakenly bought boneless beef short ribs from Costco (meant to buy flap meat, and was distracted by an old friend). Instead of taking it back, I made this recipe on a damp, rainy day for my hubby who works outdoors. Well....let me tell you, the compliments went on and on!! Just like some of the other reviewers, my husband could not stop telling me how delicious this dish was. I served it on a bed of garlic yukon mash, with a layer of sauteed spinach and mushrooms, topped it off with the smothered beef, and a star was born!! Like previous reviewers suggested I reduced the amount of beef stock and I used fresh thyme because I happened to have some on hand. I also pureed some of the veggies so my kids wouldn't notice and it made the gravy even more tasty!! Thanks for a keeper of a recipe!!

Roasted Beets 'n' Sweets

This was really delicious!!! I have to add that I took the advice of other reviewrs and added butternut squash and parsnips to the beets. I used fresh garlic with some shallots along with a few leaves of fresh sage. Really turned out lovely!! My picky teenage neices and daughter said they want it again before next Christmas. Thanks for a great way to prepare beets!!!

Citrus Turkey Brine

I am a firm believer that once you trying brining, you will NEVER go back to regular seasoning. I used this for 2 turkey breasts and we had thanksgiving in March. Together with the awesome apple, sausage and cranberry stuffing recipe there were no leftovers!!!

Italian Sausage Soup

Really, really yummy!! As usual, I tweaked a bit. Used hot italian turkey sausage, extra cloves of garlic, a small leek that I had on hand as well as some fresh basil and rosemary. Lastly, I used chicken stock (forgot to buy beef) and omitted the salt. Will be making this again and again!!

Italian White Bean and Pancetta Soup

Great recipe...I did cut back on the olive oil, added a few cloves of garlic, and also used Barilla 'Plus' multi-grain pasta. I crisped up a few pieces of the pacetta and served it on top with some fresh grated Locatelli cheese, and chopped parsley. Really satisfying!!

Chicken Stew with Dumplings

Great recipe. I received a new cookware set (Kirkland anodized-BTW...awesome pots) from Santa, and decided on a nice comfort meal for my fever ridden/ill Santa. The only two things I changed was to dredge the chicken thighs in seasoned flour, brown on both sides, then removed the chicken, allowed to cool, then de-boned. While chicken was cooling, I sauteed veggies and potatoes in the same pan as the chicken (had browned bits of seasoned flour)then returned chicken to the pan, added boxed chicken stock (no water) and continued with the rest of the recipe. I used poultry seaoning in the dumpling mix as well as light cream instead of milk. My husband ate several servings and then raved to his mother about how great my herbed dumplings were. Thanks for a keeper recipe!!1

Garlic Prime Rib

OMG....so amazing!!! The only thing I changed was using fresh (not dried)herbs. So I pureed garlic, fresh tyme, tarragon, and rosemary with kosher salt, pepper and olive oil in a mini food processor. I spread the paste all over the roast, brought it to room temp and then roasted. My family was speachless!!!

Awesome Sausage, Apple and Cranberry Stuffing

My mom made her traditional stuffing, so I decided to make an alternative. all I can say is WOW!! My hubby who does not like stuffing, devoured this one. I have to say that I ran out of celery, and used fennel stalks in its place. It added the most delightful flavor. I also ommitted the liver. This will be a regular at the holidays, and I will continue to use the fennel instead of celery. Thanks for an awesome recipe!!

Guacamole

Awesome guac!! I did add a pinch of cumin and a finely chopped jalapeno. I made fajitas and the guac was a hit!! I marinated chicken breasts for 2 hours in fresh lemon juice, cumin, chopped cilantro and kosher salt with fresh ground pepper. I grilled the chicken, sauteed some peppers and onions and together with chopped plum tomatoes and mexican cheese, the best fajitas were born. My brothers and their kids are still asking when we can have 'South of the Border' night again. Thanks for a great recipe!!

Barbequed Marinated Flank Steak

Great marinade...I did however add a couple of things. First, I crushed a garlic clove into the mixture, and I added a tablespoon of balsamic vinegar and lastly I added a tablespoon of a spice mixture called 'Mama Africa'. It is a mix of wild ginger, garlic and spicy peppers. WOW!!! was this awsome. I also used this on skirt steak and some of my neighbors were peaking over the fence to ask what I was grilling!!!
