Mini Pineapple Upside-Down Cakes

I made this recipe in mini muffin pans, using pineapple tidbits instead of rings. They were a hit at an office party - a bit sticky, but no utensils needed! P.S. - I greased my pans with Pam spray for baking(the kind w/flour in it) and did not have any problems with the cakes sticking to the pan.

Best Ever Popcorn Balls

Great recipe! I took one reviewer's suggestion and combined the popcorn and syrup mixture in a clean sink. This made it super easy to evenly coat the popcorn mixture and clean up was a snap by filling the sink with hot water. In one batch, I added candy corn...very cute for Halloween. Will definitely add this to my collection of favorites!

Chewy Coconut Cookies

EXCELLENT! I added a cup of pecan pieces for some extra flavor, but I love the coconut chewiness of these cookies. A keeper, for sure.

Cherry Fluff

I added chopped pecans to the top for a pretty presentation. Very simple recipe with great results! Have also tried the fat-free version using fat-free condensed milk and fat-free cool whip. Tastes just as good although the consistency is a bit "runnier" than the original version.

Granny Kat's Pumpkin Roll

SO GOOD! I followed others' suggestions by using a larger pan, covering the bottom in wax paper, spraying with Pam and allowing the cake to cool for 5 minutes before turning it out onto the towel. I didn't dampen my towel--just dusted it w/confectioners sugar-- and the cake rolled up perfectly...no cracks. One hint for the icing: be sure the let the cream cheese really soften or else you'll have lumps. This cake really makes a beautiful presentation and tastes great as well!
