Cinnamon Griddle Cakes

4 stars because I did not make it as-written. I was afraid of the amounts of baking powder and cinnamon, so I cut back on both. I also didn't make them as sweet (cut out the corn syrup completely). In retrospect, they probably would have been more biscuit-like with the entire 4t baking powder, and I was honestly wanting to make pancakes.

Reduce the oil by half and this is a great recipe! Marinated for an hour and broiled for about 6-7 minutes on each side.

4 stars because I reduced the choc.chips, butterscotch and marshmallows by half. Otherwise it would have been WAY too sweet! To retain the butterscotch flavor, I would incorporate 1/2 cup butterscotch chips in with the choc.chip/nut/mallow mixture. Also, it is a MUST that you line the pan with foil. After cooling slightly, I lifted out by the foil and cut into bars.

Judging from the recipe as written, it would have been very bland, thus 3 stars. I added cinnamon, vanilla and ground cloves, as well as replaced 1/2 the sugar with packed brown sugar, as another reviewer suggested. I will say that the yeast in this recipe, IMO, serves no purpose because a yeast needs time to activate. The next time I make this, I will replace the yeast with 1/2 t. baking soda that will react with the yogurt to create pockets of air and give this recipe it's cakey-ness. :)

Fluffy Cake Doughnuts

To make these Cake Doughnuts fluffy, mix just until moistened and use buttermilk (3/4 cup of milk w/ scant 1 T vinegar; let sit 5-10 mins). Otherwise, you will get a tough doughnut from over-mixing. Gotta find a different frosting.

Roasted Garlic Cauliflower

Be sure to cut them into small florets for the baking time described. Also, baking with a lid or foil cover prevents scorching of the garlic. Thanks!

Four stars for taste! I am not sure if, like another reviewer wrote, the butter-sugar ratio is off or I cooked the butter-sugar too long/short. I will try again, but might use the microwave method instead.

Olive Oil Roasted Eggplant with Lemon

Great starter recipe. Took the advice of some of the top "helpers" and sprinkled salt on the eggplant cubes beforehand. It wasn't bitter at all due to that step! I also sprinkled basil, oregano, and panko crumbs.

Not sure about the "sauce" that's supposed to magically appear with this dish, but the combined spices on the chicken were wonderful. I doubled the recipe for 4 chicken cutlets and got quite a bit of kick!

Crisp Little Lemon Cookies

I liked the simplicity of this recipe, but these weren't crisp at all. The "crisp," I gather, was supposed to come from the crisp rice cereal, but the cereal ended up getting stale-like within the moistness of the batter/dough. I increased the liquid by adding 2T of oil and experimented with baking times. A longer baking time (upwards of 15minutes) does achieve a crisp cookie, but they will become brown-ish. The piece de resistance, however, was flattening with sugar before baking and afterward drizzling lemon-almond icing: 1 cup powdered sugar, 2-3 T lemon juice, 2-3 drops almond flavoring.

Garlic Chicken

LOVE this recipe. It has all my favorites: garlic, moist chicken, basil, and simplicity (salt, pepper, olive oil) blended in. My substitutions: I thinly sliced three fresh basil leaves instead of dried; used olive oil; and used about twice as much homemade chicken broth in the cooking process. I kept the 1/4 cup for the sauce, however. If you like sauce -- and this is fantabulous sauce - double all ingredients for 2-3 chicken breasts.
