Quick and Easy Chicken

Reviewed: Apr. 11, 2011
I named this Sweet & Zesty Chicken. I followed the suggestion of other reviewers and made more sauce than suggested because we love sauce on our rice. I did 1/2 c + 1 Tbs. ketchup, 1/4c + 2Tbs. soy sauce. 1/4c sugar, 1/4 + 2Tbs vinegar because I didn't have lemon juice. Other than that i followed it exactly and it came out GREAT!! i'll definitely be saving this one and tweaking it some more. I served it over Basmati rice!! SO GOOD!!!

Salsa Chicken Rice Casserole

Reviewed: Nov. 14, 2009
Because i didn't have everything on the ingredients list i had to make some changes and i have to say It Turned Out Great!! I only had cheddar cheese and i'm sure i didn't have a total of 4 cups...more like 2 cups. I also substituted sour cream for the mushroom soup. In fact i'm not sure i would have liked it with mushroom soup. I took the advice of another reviewer and sauted my onion with my cubed chicken rather than boiling the chicken. I also had fresh cilantro, i chopped that up and served it as a garnish on top. that was a nice addition. Will be adding this recipe to my regulars :)

Parsleyed Rice Pilaf

Reviewed: Feb. 2, 2009
This was GREAT! It was just just what I was looking for to go with my salmon dish. I didn't have fresh parsley, I used dried and used a little less than 1/4 cup still tasted GREAT! I also used real long grain rice not the instant.

Peanut Butter Bars I

Reviewed: Aug. 5, 2008
Not sure what happened here... but the peanut butter base was not firm. I poured it in to the pan thinking "this needs to be thicker I know it does" but thought maybe after it was in the fridge it would firm up. I should have gone with my insticts and added much more powdered sugar!!! AWESOME flavor, but needed tweaking

Honey Mustard Grilled Chicken

Reviewed: Jul. 25, 2008
Really Great recipe! I was looking for something quick that didn't have to marinade, and this did it!! After reading some of the other reviews, I went ahead and used Worchestershire sauce (I had no steak sauce), added about 1 garlic clove, and fresh ground pepper. SO TASTY!!!

Strawberry Oatmeal Bars

Reviewed: May 31, 2008
This is a great, throw together quick recipie! I found it because I didn't have any "standard" ingredients ie: eggs, brown suger, chocolate etc. It tastes good too :) After reading the other reviews, I made it in a smaller pan and SO glad I did, I also increased the flour and oats.

Soft Garlic Breadsticks

Reviewed: Apr. 10, 2008
This was not what I was expecting! I was hoping for a fluffier breadstick. These were very dence. I followed the recipe to a T. Fine flavor though. I think they would have been better without the basil.

Best Beef Dip Ever

Reviewed: Sep. 30, 2007
Pretty good, I took the advice of others, and slow cooked the roast through the night, refridgerated it through the day and ate it for dinner. Very easy! Great flavor. I would have to say that because the roast is shredded it is kind of difficult to keep it in the bread, but good none the less. It does make more than enough dipping juice, but it needs all the moisture to keep the roast moist.

Red Potato Soup

Reviewed: Sep. 30, 2007
This was a very tasty soup. Of course using the red potatoes, the soup stayed chunky. I like my soup a bit thicker, so I would have mashed up some of the potaoes to my liking. Great flavor though. I didn't have an onion so I used onion flakes, didn't have celery seeds, but we used celery salt to our liking, and was very tasty!

Best Brownies

Reviewed: Sep. 30, 2007
Flavor, ease, and time was all Wonderful! Make sure that if you live in high altitude that you add more flour. I didn't and was sorry! they turned out very flat- like 1/2 inch thick, but it is because i forgot to add the extra flour. I would have added at least 1/2 cup more than the recipe called for. YUMM!

Gourmet Chicken Pizza

Reviewed: Aug. 12, 2007
I just got back from camping and didn't have much in my fridge. this was a great recipe to use quick defrost chicken and the can of crust i had. i wouldn't call it gourmet, but good i would say. i took the others' advice and seasoned my chicken with garlic, onion powder, chili powder, and salt. I'm glad I did. I didn't use all the tomatoes it called for either. ALL AROUND GOOD PIZZA!

Wrapped Salmon

Reviewed: Aug. 2, 2007
I took the advice of someone else and used 4 sheets on each salmon instead of 2. It made working with the dough MUCH easier! I personally didn't care for the recipe, i didn't like the two textures together, and the phyllo dough doesn't really have a flavor, but it did use it up out of my freezer.
