Fluffy Pancakes

Fabulous Homemade Bread For the Food Processor

So easy, and tastes good, too. I was glad to find a recipe that didn't involve a bread maker or a lot of kneading. This turned out great, dispite the fact that I used all purpose flour rather than bread flour.

Lentil Soup III

Slow Cooker Chicken Marrakesh

I made this exactly as the recipe reads, except I substitute thighs for breasts, as I often do in slow cooker recipes. (breasts often come out too dry and tough). I thought it was just okay. I thought it would be more flavorful, but I found it kind of bland. It also had too many "orange" root veggies. If I were to try it again, I would use just one sweet potato, more tomatoes, and up the amount of spice.

Black Bean Brownies

These were so moist, yummy and good, I'll never make any other brownie. I am very particular about my brownies, too. One of the reviewers said not to use Special Dark cocoa, but that's what I had, so I used it anyway. It made for a great dark chocolate brownie. I was careful not to use more that the specified 1/4 cup, though. I also added 1 t. baking powder. I was afraid it would make the results too cake-like, but it turned out perfect.

Delicious Black Bean Burritos

This recipe is a staple at my house. It's a quick easy meal when I want something satisfying, fast. I make it just as it is written, but at times have also added corn, chopped summer squash, tomatoes, salsa or chicken. I also like to add chili powder for spice. It's a very versatile recipe.

Honey Corn Bread

Sweet corn bread? Well, here in the South, it's considered a sacrilege. But I wanted to make some Johnny Cake, just like my mid western Momma used to make. This fit the bill, best I've ever had! And my born and bred Southern husband loved it too. I did have to substitute milk for the cream, but it eas still great.

Slow Cooker Chicken and Dumplings

I halved this recipe because I was cooking for 2. It turned out great. Very easy and satisfying. I prefer to use cresent rolls sliced in strips instead of torn biscuits. By the way, if you add a bunch of veggies, you've got chicken soup, not chicken and dumpings.

Easy Fried Spinach

I have been making this at home for years, using olive oil instead of canola. I finish by adding salt and fresh ground pepper to taste, and a splash of balsamic vinagar. This is a tasty way to get our greens that even my husband loves.
