Soft Giant Pretzels

My kids were wanting mall pretzels today when we went shopping--decided to try them at home. I used my KitchenAid with the hook and let the water and yeast sit for 10 mintues as I do for pizza dough. Then added brown sugar and flour and let the KitchenAid do it's thing for 5 minutes. Resulted in perfect dough to use; even my 6 year old could handle it. We ended up making pretzel bites and they were great! We waited for the pretzels to float to the top before we fished them out and then baked them. Melted butter and salt was perfect and the overall effect was fantastic. I might try putting a little salt in the dough next time, and putting melted butter and salt on before I bake just to experiment. Wonderful recipe!

Floating Island Punch

Got rave reviews on this punch at a baby shower on Saturday. I followed the advice of others and did not use the simple syrup. Used 1 can each of OJ and pink lemonade, ginger ale, Talking Rain Citrus twist water for the carbonated water, and lemon sorbet as I couldn't find a small orange sherbet. Instead of ice, which I think waters it down, I cut and froze rounds of Cara Cara oranges. The first batch of punch was gone about 5 minutes after I made it. I didn't count on this, so had to improve with a second batch without all the ingredients. Thanks for the recipe of an easy to make punch that is very tasty.

Emily's Famous Sloppy Joes

Ultimate to-die-for sloppy joes on a winter night. I've made this recipe for quite some time. Every time I serve it for guests, I'm always asked for the recipe. Ah....if only I could claim it! Thank you for a great recipe. Reading some reviews, sounds like there might be some taste differences going on. That being said, I would recommend playing around with the chili powder, brown sugar and garlic. My husband has had it several times with me and said tonight was one of the best. I did keep the brown sugar as is, I put in two teaspoons of chili powder for our guests (instead of three/one tablespoon) and put in tons on garlic. But then again, I'm one of those people who looked at the first initial 3 cloves of garlic and immediately doubled it! One thing I've found through the years is the way garlic is presented into a dish. I used to mince it, but found a Pampered Chef garlic press at a party I can't live without. Not only is it faster and easier than mincing, but it releases the juices of the garlic into your dishes (a tip for not only this dish, but others as well). All in all, I obviously could go on about it. I had a very particular person at my table tonight and he loved it, so I knew this was the ultimate score. Thank again!!

Celebration Lime Cheesecake Bars

So very good...the coconut adds the little special touch. I used regular limes for the juice, but think that key limes would be very good as well. Very easy to make. Made a batch for a Christmas party and cut them into bite-sized pieces. Very-honest-when-it-comes-to-recipes-husband said they there very good. Fresh berries on top or a berry sauce to drizzle over would be superb. Thanks for a great recipe!

Cranberry Pistachio Biscotti

To die for!! I've been toying with biscotti recipes for a couple of years, but this is the best. Tart, sweet and salty...all the best flavors. I did the recipe exactly as mentioned (make sure you have unsalted pistachios, or heed the suggestion.) A very good Christmas gift with the colors. One thing I realized: I had some ends that didn't get double baked and they were just as good, but a better texture for those who don't like the hard, crispy, traditional biscotti. Will try as regular cookies as well! Thank you so much for an excellent recipe.

General Tsao's Chicken

Oh so good!! Very labor-intensive, but worth it. Definitely 1/2 the cornstarch whenever it calls for it. Instead of deep frying, I just cooked in a very hot pan, constantly stirring. The texture was a little different from traditional recipes, but we liked it (not a fan of deep frying if we can pan-fry instead) I also halved the oil in the chicken mixture and turned out fine. Thank you so much for this wonderful recipe!

Jamie's Cranberry Spinach Salad

My oh my! What a fabulous recipe. Just the perfect amount of crunch and sweetness. The dressing is very light and flavorful. I put too much on but still was wonderful. Thanks for a great salad recipe!

Baked French Fries I

Oh so good! I used spray on the cooking sheet and then moved them around halfway through to prevent sticking. Will try with more onion and garlic powder, but my husband raved about them. Great recipe!
