Sweet Potato Enchiladas

So very tasty. I added two diced zucchini and one sauteed yellow onion to the sweet potato mixture. Also used half a block of neufchatel and mixed it into sweet potatoes with a hand mixer. I used a can and a half of Hatch roasted green chili enchilada sauce and topped with sliced olives. Very tasty. Corn tortillas add a lot of great flavor so I recommend them over flour by far. Also no need to fry tortillas before filling, microwave for a few seconds, then dip them in sauce to soften. Makes one very heavy 9x13 dish, great for sharing or for giving to a neighbor. Worth the effort!!

Peanut Sauce I

Excellent. After lunch at a Thai cafe, we were craving more peanut sauce! I used brown sugar, and rice wine vinegar, and black pepper, since I didn't have the exact ingriedients. We ate it over brown rice, broc, tofu, onions and garlic. Very good.

Whole Wheat Beer Bread

Tasty!!! I used the half cup of brown sugar but otherwise followed the directions. Next time I will use all whole wheat flour as an experiment. I used a bottle of lager. And the best part was this bread was great even though I live at 9500 feet!!

Tofu Stroganoff

I used all sour cream, and lots of dried dill. Also about 4 big cloves of garlic. It was scrumptious and we fought over the leftovers!

French Onion Soup V

I am hesitant to review this because I made so many changes. First of all I used olive oil instead of butter, vegetable broth, no flour, and a cup of ESB (extra bitter beer) instead of white wine. I didn't put the bread and cheese on top of the soup. I sliced a baguette in half, topped it with shredded swiss and parm, paprika, and broiled it. It was so good! Perhaps not classic, but I highly recommend it. : )

Sausage Barley Soup

Banana Banana Bread

I made this with whole wheat flour, half applesauce/half oil, and less sugar. Well ripened banannas are sweet enough on their own. Walnuts make it extra tasty, and a hearty snack for hiking and skiing.

Sour Cream and Chive Mashed Potatoes

Very good, simple, and hearty side dish. Because there are so few ingriedients though, you must use top quality items. I used non-fat sour cream, and old-ish russets, and it did not quite live up to it's potential.

Hot Artichoke Dip

I hated this. If you like hot mayonnaise, then you will enjoy it. I gave it two stars because the ladies at the baby shower I brought it to gobbled it up.

Glazed Tofu Meatloaf

Really yummy, although pretty salty. I used only 1 pound of turkey, and twice the tofu, and it was great. Next time I will try it with only tofu, no meat, and maybe a combination of spices rather than the super salty onion soup mix.
