Rosemary Lemon Grilled Chicken

This was delicious but I am giving it 4 stars because the original recipe is a little confusing. I says to blend butter, but doesn't say to melt it. I tried blending it for 20 mins because I thought it was supposed to be a rub (like for roast turkey) and finally "nuked" it for 45 secs. The lemon juice wouldn't mix with the butter until it was melted. Next time I will remember to look at the other reviewers comments first and just use olive oil. But otherwise this was sooooo good, especially on the grill.

Zucchini Soup II

I had some large scallop squash left from the garden, so I used that instead. We also don't use a lot of processed food and wheat, so I skipped the soup and flour. Here is what I did. Sauteed finely chopped onion, fresh garlic and mushrooms, then took half out. I added cubed scallop squash, carrots, and celery, and sauteed until soft. I pureed with vegetable stock we already made, then put everything back in the soup pot, included saved onions and mushrooms. I added cream instead of milk, about 1 cup, some salt and pepper. Even my two year old ate the "yum-yum-tummy" soup. I just didn't tell him it was full of veggies.

Best Fried Green Tomatoes

I have made green tomatoes a few times in the past and always come away with a soggy, greasy mess, so this recipe was a great change. The tomatoes were crisp and light and really easy to make, although our fingers did get really gummy and there was a bit of a mess on the table. I baked them rather than frying just to try and they were perfect, crunchy on the outside, tender on the end side and not at all greasy! I am giving this four stars, though, because we did think the batter was pretty bland. I added garlic powder, onion salt, and italian herbs to the cornmeal bread crumb mixture, and in the last batch we made, I als put a few shakes of hot sauce into the egg mix, but it still needed something else. I will have to play around with the seasonings, but other than that, this was a great recipe.

Vegetarian Phad Thai

This was the first recipe I used on allrecipes.com, and we still love it. Is pretty heavy and sweet, but worth it. We make a whole batch, then add it to recipes in smaller amounts. I love it because I can't eat fish, and my husband likes the extra peanut flavor. Follow the directions on your noodles. I boil water and pour it over the noodles until they are pliable but not completely soft, this helps them not stick. We spice ours up with chili paste and use lime, not lemon. This is still my favorite recipe here.

Mrs. Sigg's Fresh Pumpkin Pie

This was a fanatastic recipe! I have never made pies before and tried this and pecan pie V from the list as well. We used pumpkin from our garden, which made it even yummier. My husband loved the creaminess and flavor and I was amazed at how easy it was! I did add a little extra spice like some of the reviewers, and I had about a 2 1/4 cup pumpkin from our pumpkin so I threw it all in there, and it was perfect. Thanks!

Sweet Potato-Cashew Bake

I absolutely love this recipe. I am surprised more people haven't raved about it. Last year was the first thanksgiving I cooked and this recipe was a peace maker. I love yams with brown sugar and nuts and my husband is a marshmellow man. This way, he can get all the gooey marshmellows of the top and the second layer lets me have them my way. I made this several times after thanksgiving and this year I tried something different. I mashed the yams with butter before layering (so we could cut the butter in half) and also used pecans for a more traditional taste. It was fantastic! Thanks for the recipe!
