Best Baked French Fries
Made these a steak cut fries. I used garlic flavored olive oil (I like the added garlic flavor). The fries turned out crispy on the outside and soft in the middle. Delish. I also used red skinned potatoes, as that is what I had on hand.

Fish Chowder II
Very good. I used yellowtail tuna instead of the cod. I also used only a half an onion, omitted all the water, used 4 cups of whole milk and added 3 tablespoons of flour while boiling. Chowder came out thick and creamy.

Eggplant -- Easy, Good and Tasty
I changed the recipe a little. I added garlic oil to the egg mixture and added parmesean cheese to the bread crumb mixture. I also used italian breadcrumbs and left the tomatoes in slices rather than diced. I placed a basil leaf on top of the tomato. Overall the eggplant was delicious, but remember to eat them right away, as they will get soggy in about 1 hour.
