Egg Drop Soup (Better than Restaurant Quality!)

If you use low sodium, no fat broth - you can use the soy sauce without making it really salty! My favorite way to make a meal out of it is to add some shrimp sauteed in garlic and cabbage to the soup - filling and yummy!

To really make this salad pop - toast the almonds and ramen slightly in a pan - gives it a nuttier smokey taste! and add toasted sesame seeds for even more flavor.

Dijon-Tarragon Cream Chicken

You have to try this with dry vermouth to deglaze the pan. I also dredged in seasoned flour as others mentioned - but the vermouth makes it!

Garden Pasta Salad

Mushrooms are a must have for me along with garlic(minced) red peppers,olives, and artichoke hearts. Try making it with 3 cheese tortellini as your pasta and the bowl will barely make it to the dinner table! I use "Cheese Fantastico" salad dressing which is like a kicked up version of Italian.

I think with fresh rosemary or another herb as the front note it would be okay, but even with adding spices to my flour and more garlic to the saute, I found this recipe unremarkable.

Italian Chicken with Pesto Potatoes

I added roasted red pepper and a basil leaf to the cheese that I stuffed the chicken breast with. I seasoned the chicken with garlic powder and added some chopped fresh cloves in with the potatoes while baking. Loads of flavor and very colorful when you cut into the chicken! Great for dinner parties - can be assembled earlier in the day and popped in the oven.

Crab Stuffed Chicken Breasts

I substituded 1/2 cup of white wine for the chicken stock, and used 1 cup of milk. This also makes a great stuffing for fillet of sole or other white fish!
