Honey Chicken Stir-Fry

I've made this twice and really enjoyed it both times. The first time I added red pepper flakes which I thought was great but was way too hot for my bf. The second time I omitted the red pepper flakes but somehow the broccoli ended up overcooked and a bit of mush. Very important to time it right when putting the broccoli in the mix and only cook for the 4 to 5 mins as recommended.

Chocolate-Covered OREO Cookie Cake

When my boyfriend's son requested an oreo cake for his birthday this was an excellent rendition of a giant oreo and was AWESOME to eat as well! The three of us managed to eat the entire cake in two days - it was that good! I used a butter chocolate recipe for the cake mixes and also added four or five more crushed oreos as it didn't seem to have enough in the creamy middle. Keep the cake refrigerated otherwise the creamy bit gets too soft and messy. Definitely a keeper!

Orange Cake

This cake was amazing! I used a new bundt pan that I had just gotten and it turned out beautifully. The flavor was excellent and I would highly recommned! Thanks for the recipe!

Taco Salad I

We're talking about a taco salad - so not really the most tasty thing in the world to start off with. This recipe was good. I only used 1/2 the bottle of dressing and used Catalina instead of French b/c the store didn't have French. I also laid all the fixings out like a buffet so everyone could make their salad how they wanted it.

Maple Salmon

This recipe was really nice. Very easy and quick. The flavor was really subtle and I probably would have preferred it to be a bit stronger, but I will definitely be trying again.

Quick Crescent Taco Pie

I really enjoyed this recipe - although probably not the best taco pie recipe I've ever had. Very quick and easy though - so that is certainly to be appreciated. Thanks for a great recipe!

Mini Meatloaves

I generally don't like meatloaf but my husband loves it - so I decided to give this recipe a go and it was fantastic. The mini meatloaves are nice - and more aesthetically pleasing for serving to people. My only change was that I shredded a raw potato into the meat mixture before forming the meat loaves and it really made them nice. The sauce for the top is excellent.

Not necessarily a fast Snickerdoodle recipe - but always wonderful. These are worth the effort and always get a wonderful review when I take them into the office. I follow the recipe to a "T" and never get complaints.

Spinach Tortellini Soup

This is a great recipe to make in the evenings after work or when you don't have a lot of time. Very good - although a little too much spinach for my liking. My changes: 1. I added a can of corn drained. 2. Used Italian flavored diced tomatoes and eliminated the other spices. 3. Cooked chicken in a skillet, shredded, and then added to pot. 4. Only cooked the tortellini for 3 to 5 mins. My suggestion would be to make the soup and keep the tortellini separate - especially if you're anticipating leftovers. Simply add the pasta you're going to eat immediately for a few minutes before storing. Allows the rest of the soup to keep better for eating leftovers. The pasta starts to fall apart after being in the fridge for a day.

Chocolate Trifle

I made this trifle using some of the variations recommended in other reviews and literally had coworkers licking the bowl. Made it 2 weeks ago and had people asking for it again already this weekend. My changes: 1. I used fat free sweetened condensed milk. 2. Light cool whip. 3. Whipped my own whipping cream to mix with the chocolate pudding. 4. And used apple sauce in the brownies. Very good!

Six Can Chicken Tortilla Soup

I've just made this soup for the second time now and it was wonderful! I put everything into the crockpot first thing this morning when I got to work and then by lunch it was ready to be served for all of my coworkers. Was nervous about the canned chicken vs. cooking my own, but it actually turned out really well. My modifications: substituted 1/2 of the chicken broth for reduced fat cream of chicken soup, added a packet of taco seasoning, and rinsed the black beans before adding. Turned out perfect and was a great treat. Thanks for the recipe!
