About this Cook
I have been "retired" from the professional life for 3 years now. Since I never had time to explore my passion for cooking while I was working, I've made up for it after retiring. I am lucky to have a hubby who loves food, and will eat just about anything, yet is honest about what's good enough to make again, or not.
My favorite things to cook
I love to make things that cook all day and reheat well, such as soups, beef stroganoff, pepper steak, beef roulades, and other crockpot recipes, in the winter. I also love to cook international foods...Indian, Japanese, Chinese, Mexican and Mediterranean are my favorites. Love to make sushi, Tandoori chicken and Far Eastern rice, sates, sweet and sour chicken and fried rice. Then there are the old standby's...meat and veggies such as grilled fish, ribs and chicken, Hawaiian pork chops, and steamed or roasted veggies.
My favorite family cooking traditions
Favorite traditions with hubby alone are tacos, guacamole, sushi and grilled fish and veggies. Family favorites are sloppy joes, ribs, cucumber salad with dill, round steak with onions, tossed salads and pork tenderloin.
My cooking triumphs
I have had several triumphs recently...beef, chicken and pork sates, beef (from this site) and chicken (PF Chang copycat) lettuce wraps, sweet and sour chicken with fried rice and grilled salmon and Chilean sea bass.
My cooking tragedies
Seekh kabobs...have made them twice now and can't seem to make them like at our favorite Indian restaurant. The spices are always too strong.

Mexican Rice III
I have made this recipe numerous times and always a little different, depending on what I have on hand. When I don't have tomatoes, I use a can of drained diced tomatoes. When I don't have green pepper, I use frozen peas and it is delicious too. A very versatile recipe. Thanks for sharing this one.

Slow Cooker Chicken Taco Soup
I've made this recipe several times now. It's easy and freezes well so there's always something good to eat on a busy day. The only change I've made is to add fresh cilantro when I have it on hand.
