Nanna's Banana Bread

OH MY MY! This was incredible! The only enhancement I made was to use an additional banana. Perfect flavor and texture. Each time I've made it its devoured within the hour!

Fresh Peach Pie I

AWESOME!!! Went peach picking with the family and 35 lbs. later I was up for more options in recipes. This one was such a hit I made 2 in 2 days! I'm at over 6800 ft in altitude and needed to make some minor adjustments (no addtl water and needed more starch). Other than that it was easy and delicious!

White Chicken Enchilada Slow-Cooker Casserole

Love it! Love it! Love it! It has become a favorite at home and a request for any pot-luck I go to. I have made it straight from the recipe and other times I have made some substitutions. Either way it is a hit. Got to love a crock-pot recipe that goes against the grain of just meat and veggies!

Though it is a very traditional recipe it is a great one! I found that for higher elevations, it takes almost a 1/2 c. additional flour to gain the correct consistency. More flour meant more flavoring. We made 4 double batches this afternoon . . . lots of fun with my mother-in-law and three daughters!

Butterscotch Bread Pudding

This is AMAZING - even my kids loved it! It makes a great potluck dish . . . quick, yummy and a hit with the family and office. As a little extra sweetness, I used some old cinnamon rolls as well as regular french bread.
