Banana Pancakes I

These are AWESOME! We spread a caramel sauce and toasted nuts or macadamia nuts over the top. Mash the bananas kinda chunky, mix all the wet ingredients in, mix dry ingredients together in a bowl, then add to the wet. Whip the eggs whites into stiff egg whites. and fold them in right before grilling.

French Quarter Bread Pudding

We REALLY enjoyed this! It was delicious. Even Jay liked it. I changed it a little, by sprinkling brown sugar liberally over the top. I used my smaller glass casserole dish and sprayed a piece of tinfoil with pam to put over the pudding. We used left over carmel sauce from the bananas in carmel sauce recipe on this site - it was delish! EVERYONE enjoyed it. I did not have half and half - so used the whipping cream I had on hand instead, added a little extra vanilla, no raisins cause Jay hates those and I let it soak up the custard for about an hour before baking. Perfection! Carmel recipe was 1 C. sugar 1 C. butter - whipping cream

Pumpkin Chocolate Chip Muffins

I substituted sweet potatoes for the pumpkin and applesauce for the oil. Also did half brown sugar, half white and half whole wheat flour, half white. Also went a very slight bit heavy with the spices and added ginger to the list about 1/4 tsp. The kids loved them, Tylar ate 4 in one day and begged for more! I filled the cups really full and only got 19/24

Golden Pork Chops

This was okay... I first browned the meat on both sides, and then added some milk to the soup before baking for nearly an hour. It was too soupy, so I had to thicken it with some flour and water mix. then it was delicious! The family felt it was normal okay.

Hot Peanut Sauce

This was excellent! My Cayenne seemed weak to me, I'd have liked it a little spicier - but I can adapt that next time! My picky kids AND my husband loved it over chicken satay and coconut rice! YUM

Chicken Satay

The lemon in this marinade was WAY overpowering for us. Otherwise it smelled really good and seems to have great potential so we are going to try again. I followed the recipe to a T. Oh, and I only marinated for 4 hours! If I had gone for 24 it would have been awful. My problem MAY have been: Fresh squeezed lemon juice? OR I marinated in strips, not whole breast? Maybe it just absorbed too much because of that. I will likely try one more time with say 1-2 Tbsp of Lemon.

Creamy Rice Pudding

This was excellent - my husband, who doesn't care for rice pudding even liked it. I followed one posters advice not to add the sugar until I was sure the rice was cooked to my liking, so I added it towards the end of the initial cooking with the milk. I also tempered the eggs so I wouldn't have any scrambled egg pieces. PERFECTION!Yum. I will be trying this next time with some brown sugar just to see.
