Bodacious Broccoli Salad

WAY too much pepper. I cut it back to 1 1/2tsp and my guests still left it on their plate. Next time I would only use 1/2tsp

Banana Chocolate Chip Cookies

I used 1/2c white sugar and 1/2c brown sugar. They were pretty sweet so I will try reducing a bit next time. Definitely not a tradition cookie...more like a muffin top. I would suggest taking them out of oven after 9min. I would have burned them to a crisp if I left for the full 12-15 min.

Banana Oat Muffins

I had one banana to use up so I halved the recipe using one full egg. I panned a few mufins to be plain then added some raisons to the rest of the mix. Super yummy. Will make again for sure!

Sweet Restaurant Slaw

Use only 1/4c of sugar and it's perfect! I've made this recipe at least 10 times now. Each time someone says it's the best coleslaw they have ever had.

One Bowl Brownies

Super Yummy! As recommended by others, I used 12tblsp Cocoa plus 3tblsp veg oil in place of the unsweetened chocolate. Baked in 2-8inch cake pans so that I could cut as a wedge and serve with Raspberry sauce, a few fresh raspberries and sprinkled with icing sugar. Recipe is a real keeper!

Truck-Stop Buttermilk Pancakes

Now that's a pancake! Light and fluffy...everyone loved them. I scaled recipe back to 4.8 to feed 3 adults and 2 kids. Did not have buttermilk on hand so used 2 tblsp of lemon juice and filled measuring cup to 2cups of Milk...let sit for 5-10 mins to make your buttermilk, then added the required 1/2c regular milk with the rest of the wet ingredients. Will certainly make again!

Buttermilk Pound Cake II

I have no need to ever look for another pound cake recipe. This one is top notch! I doubled the vanilla and lemon extract and did end up cooking for just over an hour....was more like 70mins. Oh and I didn't have buttermilk on hand so I used 1 tblsp of lemon juice and topped it up with 2%milk to make a cup. Let that sit for 10 minutes and add to recipe in place of buttermilk. Served with real whip cream and sliced strawberries sprinkled with a little sugar...Yummy.

Leek Potato Mushroom Cheddar Soup

Loved this recipe! I used Porcini Mushrooms (dried). I soaked them in hot water for about 10-15min while preparing rest of the soup. I saved the water(about 1 cup) from the mushrooms and added it to the chichen broth for more flavor. I only added the mushrooms after mashing the potatoes. I served this as a main course for dinner so was not 6 servings. Turned out to be 3 large bowls and 2 kid size bowls. Everyone loved it!

Baked Macaroni and Cheese I

Yummmy! added a few things...browned 3/4pound of hamburger(omit the bacon) and seasoned with 1 tsp of taco seasoning (from this website), I added this to the cheese sauce along with and extra 1/4cup of parmesan cheese. Oh ,I did increase the garlic to 3 cloves and the pasta was 12ounce of whole wheat. Verrry chessy...lots of sauce. Both my children ate their entire dinner.... THAT never happens. Thanx for the recipe.

Chocolate Chocolate Chip Cookies I

I was concerned when my first batch was so thick. No need to worry as these cookies are amazing. Taste like little brownies. The only change I made was 1 1/4c white flour and 3/4c whole wheat(instead of 2c white) Cookies look a little underdone when they come out but are super moist when cooled.

Awesome! Used half the amount of spices, 1 3/4c Sugar, 3/4c walnuts(what I had on hand) and 1/2c of diced dried apricots. So moist...a keeper for sure.
