West African Peanut Stew

I've never tasted anything like this! Very different but couldn't stop "tasting" it. I copied others and added a dash of cinnamon, cumin & a pinch of sugar. Also subbed dried ginger for fresh. (I know, a big no-no) But I was out. I'm letting it simmer on the stove until dinner. Will serve over jasmine rice.

Mexican Rice III

Coconut Pie

The custard like center tasted best after chilling in the fridge for a couple hours. I threw in a cup of chocolate chips to the mix which gave a chocolate layer at the bottom of the pie.

Dreamy Chocolate Chip Bars

These were hard for me to let cool! Full of chocolate, coconut & butter flavor. I reduced the amount of flour and used the whole bag of chocolate chips. Yes, they are dreamy!

Spinach and Potato Frittata

My family loved this frittata! I used cheddar and pepper jack cheese. I popped it in the oven to broil the top to get the cheese bubbly and browned. I've made this a handful of times now, great recipe.

Royal Icing III

This frosting is perfect to decorate sugar cookies! The trick is to beat the heck out of those egg whites! I had to dump out my first batch since it was too runny from not beating the eggs long enough.

Muffuletta Sandwich

To make the olive salad use ingredients 2-7. I did that and let it marinate in the fridge a few hours before dinner. Then put together the sandwiches. It's the bomb! I chose this recipe because of the simple list of ingredients. thanks for this one!

Shrimp and Andouille Sausage with Mustard Sauce

Perfect just like it is! It IS on the mild side. I love to spice things up. Even if this recipe had called for red pepper flakes I most likely would have added even more than stated. Everyone has such a different tolerance of heat, it's hard to say "this should have been more spicy". I might add horseradish next time. Great recipe! Looks fancy but takes no time to put together. (My sauce got lost after I added the meat & sauce to the pasta.)

Taco Stuffed Shells

Fun and yummy dinner! I used Enchilada sauce since that just sounded better to me instead of salsa. I had enough filling to make 22 shells and froze half of them. Try it with some cilantro on top!

Delicious bread. My bread was done at 58 minutes. I used butterscotch in place of the nuts. I also mashed the bananas first because that's what we prefer.

Beautiful dish! This would be great for company. I only used button mushrooms. I couldn't find gruyere cheese so I used a 5 cheese Italian blend. The white cream sauce was heavenly.

Very good and you can get creative with it. I used M&M's and peanut butter in place of the butterscotch. I added about 1/2 cup more of potato chips. I spread the mix out on parchment paper and put in the freezer to firm. Then broke it up into chunks.
