Basil Tomato Soup

My mom and I have been making this soup for years. We like to add equal parts tomato juice and chicken broth for more flavor. Love it! Also, I don't think the sugar is needed. The longer you simmer the crushed tomatoes, tomato juice and broth, the better!

Eggplant Parmesan II

My vegetarian sis enjoyed this but the others barely ate any. I even took the extra step some suggested and "sweated" the eggplant. Was not very good. I guess we prefer our eggplant parmesan fried!

Grilled Salmon I

The salmon lovers here enjoyed this! The others said it was just okay. I broiled the salmon on high for 8 minutes until golden. Served with Quick Brown Rice and Mushroom Pilaf with salad.

Quick Brown Rice and Mushroom Pilaf

This was a very Fall looking dish. I noticed a lot of the reviews said the rice needed more water. So, I added more until it looked fluffy. I left my walnuts under the broiler too long and had to made the second batch with pecans. I'm sure walnuts, pecans or almonds would all work well. The whole family enjoyed this dish! (served along with salmon)

"Better than Oliver's Garden!" said my mother. It was really tasty. I cut back on calories with half and half and it was still perfect. Can see myself making this many more times.

Coco-Cola Cake III

This is very similar in flavor to texas sheet cake. My marshmallows floated to the top during baking. Not very pretty. Maybe a step was left out to heat the marshmallows through and let melt before pouring into pan.

Ranch Dressing II

The flavors are so fresh and wonderful! I made it as stated then tried it. It was very thick and would have made a perfect dip. Then I added 1/4 cup of buttermilk to thin it out. Perfect for salad.

Creamy Lasagna Casserole

I cooked this for a friend that just had a baby. I got to eat some and it was very rich. Anything with sour cream AND cream cheese is gonna taste good to me. But I actually could have used less sour cream. It was a very strong flavor in this dish.

Delicious! I love fruit dip and am always trying new recipes.Maybe I used fat free whipped topping because once i added it to the rest it didn't taste as sweet. So, I added one teaspoon of vanilla.

Cheesy Sliced Potatoes

Good and quick! I scaled it down to 3 servings and they took about 15 minutes to cook from start to finish. After pouring in the flour sauce i layered the potatoes in 4 ramekins. So, a few slices of potatoes, shredded cheese & sour cream all layered together. Could have used more salt. Then cooked until cheese melted. I used a provolone with parmesan cheese blend since i had no cheddar.

Brooke's Best Bombshell Brownies

I loveee these brownies!!! I always add a teaspoon of coffee to the batter to try to be more "gourmet". Yum. I think they taste best cold from the fridge.

Byrdhouse Easy Ginger Beef Sandwiches

The ginger flavor mixed with the garlic and soy sauce so well. The meat was so juicy. I loved it! The list of ingredients is short and easy to remember at the store. We ate this on toasted hoagies with provolone cheese along with Broccoli Slaw from AR. I ended up taking off my top bun so I could taste more of the beef. :) Next time I'd like to eat this over rice.
