Baked Dijon Chicken

Very good. However, I didn't like opening a can of evap. milk to only use 1/4 of it. After baking for 20 min, the breading was not browned. So, I popped it under the broiler for a few. Served with onion/garlic rice and broccoli with cheese.

Muffuletta Sandwich

To make the olive salad use ingredients 2-7. I did that and let it marinate in the fridge a few hours before dinner. Then put together the sandwiches. It's the bomb! I chose this recipe because of the simple list of ingredients. thanks for this one!

Easy Lasagna II

I was so pleased with this recipe! I added more seasonings to our liking..red pepper flakes, oregano, garlic, dried basil. I was able to freeze half of this into a smaller casserole pan.

Island Shrimp and Rice

I make a lot of recipes from AR. Every few months or so I come across a recipe that really wows me and goes into my list of favorites. This is one of those recipes! The sauce is so amazing. Perfect with rice and some french bread to sop up the rest. I prefer to always cook my rice in the rice cooker. For the shrimp/sauce mixture only use 1.5 cups of broth if not adding rice. You can then thicken the sauce if needed with corn startch. Also, I'm so glad I had my hubs run to the store for bacon. I don't really like nutmeg but 1/4tsp. taste just fine in this. Delicious!

Tomato Chicken Parmesan

I seasoned the bread crumb/cheese mixture with garlic powder, red pepper flakes and dried basil. I flattened out the chicken breast but might try cutting each breast into 2 thinner servings next time.

Spicy Polynesian Wrap

YUM! There is some work involved. Next time I'd like to make my rice the day before. I toasted the coconut and that gave a nice texture to the wrap. I also made a sweet and spicy aoli sauce out of mayo, garlic, saracha and orange marmalade.

Coconut Pie

The custard like center tasted best after chilling in the fridge for a couple hours. I threw in a cup of chocolate chips to the mix which gave a chocolate layer at the bottom of the pie.

Anyone could make this! It's so simple. Tasted great. I swapped out thyme for oregano because I can't stand thyme. This was perfect with baked potato wedges.

Dreamy Chocolate Chip Bars

These were hard for me to let cool! Full of chocolate, coconut & butter flavor. I reduced the amount of flour and used the whole bag of chocolate chips. Yes, they are dreamy!

Chicago-Style Pan Pizza

This recipe is for bread lovers! I had to use canned french bread dough. Worked out just fine. Makes a huge pizza! My family of 3 ate less than half of it.

Restaurant-Style Hashbrown Casserole

Crazy good! I made this for dinner with ham steaks and english muffins with apricot jam. I'm sure the leftovers will be awesome as well. The onions did not get as tender as I would like. I will most likely leave them out next time.
