West African Peanut Stew

I've never tasted anything like this! Very different but couldn't stop "tasting" it. I copied others and added a dash of cinnamon, cumin & a pinch of sugar. Also subbed dried ginger for fresh. (I know, a big no-no) But I was out. I'm letting it simmer on the stove until dinner. Will serve over jasmine rice.

Chicken Alfredo Biscuit Casserole

This is so good!! I'm 35 weeks pregnant & wanted something simple to make. I omitted the onions & mushrooms so my kids would eat it. Seasoned the chicken with seasoning salt, pepper & garlic powder. After 15 min of baking I covered with foil & baked for another 8 min. Will make again. Served with salad.

Mexican Potato Nachos

My family loved this dinner! It was quick to make and a fun new way to make nachos. I used ground turkey and a packet of chicken taco seasoning. This recipe is a keeper.

Fudge Truffle Cheesecake

Cheesecake Newbie here! I tried to wait the full hour to cool but didn't. Waited 50 minutes and had to have a slice. Very rich & smooth! Wish I had some cool whip to go with it to cut some of the chocolate flavor.

Bacon N Egg Pizza

It was raining hard last night. My sisters were over visiting and we made dinner out of breakfast ingredients on hand. I made pizza dough from scratch and gravy to pour on top! I think the gravy is a must here as it was a little dry without.

Ginger Beef Stir-Fry

This is a keeper for my family! The spice is so mild that my 3 yr old could eat it. Just add some siracha on the side if you want more heat. Loved the gingered up sauce!

Chicken Enchiladas Verde

I added garlic & diced jalapeno to the chicken mixture. We like our food on the spicy side. Also used a whole cup of cheese. I was able to make 10 enchiladas. Will make again with a few adjustments.

Turkey Wraps

Bacon, Avocado, Cream Cheese! What's not to like?! But I made the mistake of making the night before and the lettuce wilted & bacon got soft. I have lots of sauce left to make a fresh wrap tomorrow.
