Bacon and Tomato Cups

Very good! I had to hand out the recipe. Since the biscuits seemed to be a flop with most reviewers I used one sheet of puff pastry cut into small squares. The puff pastry took longer than 12 min. to get golden brown. Will make again.

Gingersnap Dip

Delicious and very unique. Served at my Christmas dinner party. My guest were dipping their chocolate chip cookies in this as well as gingersnaps! I thought it needed 3 tsp. of pumpkin spice.

Authentic Louisiana Red Beans and Rice

Pretty good meal for a cold night. I cooked mine in the slow cooker all day. I knew I should have left out the Thyme since I can't stand it. I halved the amount and it was still too grassy tasting.

Buttermilk Pie IV

I really enjoyed this flavor of pie! Smooth, vanilla and buttery taste...delicious. I sprinkled cinnamon on top. Forgot to add salt. I'm guessing that would cut some of the sugar. I'm making this every Thanksgiving now.

Easy and Fun Peanut Butter Balls

Mmm,yum! I needed something sweet and fast. I used chocolate protein powder in place of the milk powder. Then rolled in nuts and chocolate chips.

Make Ahead Lunch Wraps

Good idea! You can change this up in so many ways. I thought it was a little bland as is and added cumin, salt, pepper and red pepper flakes. I like knowing I have quick and healthy burritos in my freezer!

Basil Tomato Soup

My mom and I have been making this soup for years. We like to add equal parts tomato juice and chicken broth for more flavor. Love it! Also, I don't think the sugar is needed. The longer you simmer the crushed tomatoes, tomato juice and broth, the better!

Eggplant Parmesan II

My vegetarian sis enjoyed this but the others barely ate any. I even took the extra step some suggested and "sweated" the eggplant. Was not very good. I guess we prefer our eggplant parmesan fried!

Grilled Salmon I

The salmon lovers here enjoyed this! The others said it was just okay. I broiled the salmon on high for 8 minutes until golden. Served with Quick Brown Rice and Mushroom Pilaf with salad.

Quick Brown Rice and Mushroom Pilaf

This was a very Fall looking dish. I noticed a lot of the reviews said the rice needed more water. So, I added more until it looked fluffy. I left my walnuts under the broiler too long and had to made the second batch with pecans. I'm sure walnuts, pecans or almonds would all work well. The whole family enjoyed this dish! (served along with salmon)
