Italian Sausage Soup II

This is wonderful! Everyone loved it, including 2 kids. It was very easy to make, fairly inexpensive, and very zesty. I did change a few things..My husband cooked the sausage whole by mistake, so we just sliced them up. I cooked the onions, celery and carrots in the left over grease from the sausage until soft. I also used 2 cups of shells instead of one. The next time I make this I will try to use turkey sausage instead. This is definately going into our regular rotation!

Split Pea Soup

The first time I made this, I followed the recipe exactly, minus the celery. Everyone liked it, but I had never had pea soup and I wasn't wild about it. Since then I have tweaked it and now I love it, along with everyone else in the house. I don't soak the peas overnight, and I don't think it matters either way. I use beef stock instead of water and omit the salt. I have never used the celery. I add LOTS of garlic powder. The most important change is that I dice up a lean ham steak instead of using a ham bone. It adds some nice, lean ham to the soup without the hassle or fat from a ham bone. Having made it with the ham bone and without, I don't think it makes a big difference. I have to say I get raves about this and my young daughter absolutely loves this. I usually make a double batch because we love it so much.

Chicken Tetrazzini

This was really good and pretty easy. I did make some changes, but I don't think it made a big difference. I used evaporated milk, bowtie pasta, cubed ham and a whole rotisserie chicken cut to pieces. I also had to use a shredded four chees Italian blend. This is definately not low fat, but still a keeper.

Slow Cooker Taco Soup

My daughter and I LOVE this! I don't add any of the beans because I hate beans. I also omit the water because I wanted it to be more like chili and less like soup. The next time I make it I am going to put the corn in when it's done so the corn stays sweet.

Turkey a la Oscar

I thought this was okay, it wasn't bad, but it wasn't good enough to make very often. My 8 year old daughter loved it, but I think she'd eat anything smothered in hollandaise sauce. I used fresh asparagus because I never use frozen. I also didn't add the shrimp in because I didn't have any. It was pretty easy to make.

Greek Potato Stew

This isn't something I make often, but when I get a craving it's perfect. I leave out the olive oil, but I have to becareful that it doesn't stick to the bottom. I add some crumbled feta cheese when it cools and it's great. Nobody else in my house likes it, but they don't like Greek food in general.

Bacon and Potato Soup

This soup was really good as is, but I did tweak it a bit. I don't use the bacon because it just gets soggy and chewy and doesn't add much flavor. Sometimes I add cubed cooked ham, but often I don't. I also add potato flakes at the very end to thicken it. I use red pepper flakes instead of cheyanne pepper. This soup is really good and very easy to make.

Cajun Style Meatloaf

I left out the green onions, green peppers, used a little less of the hot spices, and used italian sausage. It was so good! My boyfriend loved it and he's a little picky. It was a little greasy from all the sausage so the next time I made it I used turkey sausage and there was no difference in taste. I also baked it on a small rack in the pan. You lose a little off the bottom of the loaf but it is worth it not to have it swimming in grease.

Brownie Mix in a Jar II

I made this mix for a craft fair. I had plenty left over and I'm glad! These are the best brownies and I will never make boxed ones again. These are so easy to whip up and everyone loves them.

Corned Beef and Cabbage II

I had never made corned beef before and didn't know what to expect. This was sooooo good. I left out the butter and salt and added much more garlic powder. I also put the veggies in with the beef for about 2 1/2 hours and they were great. I also cooked more veggies in the leftover broth because everyone ate the first batch and they were almost as flavorful. I made hash using just the potatoes and beef and it was fabulous! I made this today in the crock pot and it wasn't nearly as good. It was dry and had very little flavor. Stick with the stove top!

Meat Pie

This was fantastic and everyone loved it. I didn't find it the least bit bland, but I did change a few things. I didn't add any water to the meat mixture. I also used roasted garlic instant mashed potatoes (entire pouch) instead of a regular potato. I plan on using just a bit less cloves next time. This whole dinner was pretty easy and quick to make. It was also by far the best I've ever tasted.

Cranberry Sauce

I made this exactly as directed and never even served it. It tasted like orange juice, nothing else. There was no cranberry taste and it was very watery.

Yummiest Green Beans Ever

This was very good and very easy. It adds a nice tang to plain green beans, but might clash with a flavorful main dish. Stir the beans before serving as the sauce does not cling to the beans. And use fresh beans whenever possible! Be forewarned, they smell like dirty socks when you're cooking them.
