Lamb Tagine

Amazing dish! I've made this several times already. I include a few diced sweet potatos for added texture - it dissolves and thickens the sauce. Delicious flavour!

Hearty Tuna Casserole

Really great flavour! I loved the zucchini - the texture was great. I even liked the crunchy celery. I also added dill and milk and garlic salt instead of plain salt. Plus more noodles. I used light mayo and sour cream to reduce calories. Tasted amazing!

Magic Peanut Butter Middles

These cookies were amazing! Firstly - I did chill the dough to help with manipulating it. I flattened a small disk shape first, laid it on the cookie sheet, then applied a small dollap of peanut butter filling in the centre of each disc. Then I flattened another disc of dough, placed it on top, then worked my way around each cookie to seal the filling in. I did have to pick up the cookie and put it in my hand to seal the edges, but once I got the hang of it, it was pretty smooth. Also - I didn't bother with the sugar coating - was pretty sweet to begin with. Amazing flavour combo though! People loved them!

Health Nut Blueberry Muffins

These muffins are the best! And bonus - not a lot of fat in them. I used Oat Bran cereal cause I didn't have oat bran - and still turned out great. I also used 1 cup of whole wheat flour. The wheat germ added such a nice texture to them!

Spinach Brownies

This was great! I used 2 packages of frozen - drained. Sauteed 4 small to medium sized onions with 4 cloves of minced garlic and about 10 chopped up small white mushrooms in 1/4 cup of butter until the onions "melted" and the mushrooms browned - let cool before mixing in flour. I had to increase the flour mixture by 1/2 to keep the texture cause of the additional veggies. I also baked in muffin tins for individual portions. Yummmmy!!!

Maple Salmon

My goodness - I love marinades with maple syrup! This was no exception! Really yummy. I also wrapped in foil to reduce clean up. I also used garlic foil instead of garlic salt to cut down on saltiness. Definitely try this!

Crispy Rosemary Chicken and Fries

Super easy!! I used tons of fresh coarsely chopped garlic (plus garlic salt), fresh rosemary and dried oregano. I also added fresh mushrooms - but make sure they are on the bottom or else they dry out. I didn't mind the extra liquid, and the tops crisped up nicely. Simple, delish and savoury!

Lemon Pepper Green Beans

Really simple and tasty dish. I was lazy and used olive oil and sauteed all the ingredients in a skillet - cooking the beans first, and giving enough time so that the almonds could toast without burning afterwards then adding lemon pepper. The almonds really give a nice flavour!!

Lemon Yogurt Muffins

I needed more than one lemon - but the batter was very, very thick. Muffins still came out super soft and fluffy fresh out of the oven. I loved the light syrup that gets soaked in at the end! Sour, but sweet!

Marrakesh Vegetable Curry

A super easy one pot dish to make! I doubled the spices as well and it was very tasty! The flavours are very bold and exotic. I also agree that over cooking the veggies takes away from the texture - make sure to leave them a little crunchy.

Oatmeal Peanut Butter Cookies

Very nice cookie but waay too much salt. I think 1/2 teaspoon would be enough - wish I had paid attention to earlier reviews to catch that one. But still nice consistency - I added chocolate chips too.

I halved the recipe as well - what a great cookie! I brought them to a meeting and every last morsel was eaten! I used Pecan Pieces too, which was a bit more money but gave a really nice taste.

Benne Wafers

These are great, flat little cookies. They do spread out quite a bit. Use a Silpat or one of those flexible silicon baking sheet liners to avoid stickiness instead of grease and parchment paper. They do take a while to bake due to the small amount of dough required per cookie, and the short amount of time needed to bake each sheet. 5 minutes per baking sheet was more than enough for me, and I was continuously spooning out dough while one sheet was baking. Even still I was never fast enough to finish before the sheet that was in the oven was done baking. But they are yummy and the dough is easy to prepare!

Cold Szechuan Noodles and Shredded Vegetables

Yummy! Very good recipe. I didn't have tamari sauce, so I used a dark mushroom soya sauce instead. Still turned out very well - loved the sesame seed oil! The flavours definitely taste better after sitting for a while - but I didn't bother dividing up the sauce. I just put the whole thing together at the beginning and let it sit.
