Slow Cooker Pulled Pork

Never made pulled pork in my life but have always ordered it in my favorite barbecue restaurant. I've been on a try and make it myself kick and decided this would be a great recipe to try and it absolutely was! I made it exactly as it stated in the recipe but added honey to the top of the pork when I put it in the slow cooker. My kids loved it! We ate it with a coleslaw recipe I found here and it was delicious. I will be making this again and again. I love using the slow cooker, I can always make lots and have leftovers, which by the was were just as good as the first serving. I may try freezing some to see how it holds up.

Chiles Rellenos (Stuffed Peppers)

I liked these and my daughter loved them but I don't think I'm very good at making them. They were too greasy for me, probably didn't heat the oil hot enough, which made them difficult enjoy. I think next time I'll make them in a casserole so not only will they be easier for me to make but also not so greasy.

Florentine Artichoke Dip

I liked the recipe a lot and will definitely make it again. I did find it a little bland, however, so will be making changes to kick it up a notch.

Pad Thai

I made this! It's wonderful but I added Sriracha HOT Chili Sauce that i purchased at the Chinese grocery store, brought this pad thai to a whole new level of delish! This version a 3, my version a 5! I definitely recommend this version as a base.

Southwestern Cornbread Stuffing from Del Monte

I had a lot of leftover corn, cornbread and turkey so I went ahead and tried this. It was great! I did make some changes though. I skipped the green chili's and pecans because I didn't have any, used 32 ounces of chicken broth because it was too dry with the 14 ounce can and I added leftover turkey rather then serve it on the side. It was really delicious, my kids loved it and it was so quick and easy to make!
