Rick Bayless' 24 hour cajeta

I was reading "The Family Circle" and found a recipe for 24 hour cajeta. For those who don't know, cajeta is a milk based caramel and is great on ice cream, cake, etc. I wanted to try it, it appears to be very easy to make in that all you have to do it
cook it in a crockpot for about 24 hours. :) the only thing is that I'm a vegan and can't use milk! So I've decided to try either almond or soy milk. Coconut milk is also in the running. I'm off to make decisions and to try it. I'll let you know how it progresses!
