Cream of Broccoli Soup I

A little thin but otherwise just what I was look for :) I cooked it a bit longer to thicken in up, but next time I would probably use as much as twice the broccoli (and/or a bit more flour).

Citrus Chocolate Cupcakes

Even with a light orange glaze (orange juice and icing sugar) I was disappointed in the lack of orange flavour, but these cupcakes were so moist and tasty, I would definitely make them again (perhaps with more OJ for more flavour)

Pineapple Chicken Bites

We used "pâte brisée" for the crust, which tasted great. After struggling to wrap the first triangle, instead we put more chicken and pineapple on each triangle and topped it with a second triangle and sealed the edges, which made for a nicer-looking (but larger!) final product. Also, I accidentally used 3 tbsp of the juice, rather than 3 tsp, making for a thinner sauce, but it worked out fine, and I brushed a bit on top of the triangles before baking. Amusingly of the 3 people enjoying the final product, one found the honey too strong, and the other found it not strong enough, so it's a real question of taste with respect to the sweetness factor! In any case, I thought it was great, and will definitely make it again!

2-Step Beefy Taco Joes

Super easy, and a great twist on "basic" sloppy joes. Cheddar is hard to come by where I live (France), but I found that a mix of mozzarella and emmenthal was a good alternative.

Oatmeal-Cinnamon Muffins

I tried this recipe with two "red chief" apples, but found that it could have been better with a more tart variety, like Granny Smith. Also, adding the apples expanded the yield by over 50% (the recipe for 8 easily made 12 with the apple), which actually worked out great for me!

Cinnamon Bread II

I was surprised at how sticky the dough was, and was convinced that it was going to work, but I was pretty happy with the result. The cinnamon smelled much stronger than it tasted; so I will try what others suggest next time and add more (although I don't think more sugar is needed).

Fresh Apple Tarts

Having just made this recipe for the second time, I'm wondering if this isn't actually my favourite pie crust. Here's my original review from a couple of months ago: I was very happy with these tarts, and I only made two minor changes to the recipe: I didn't have unsalted butter so I just didn't add the extra salt and I used maple sugar instead of brown sugar, but since the flavour didn't really come through next time I probably just use brown sugar. I should note that I did have to flour up the work surface and the rolling pin pretty well to keep the dough from getting to sticky, but otherwise it was great!

Maple Apple Crisp

This is a favourite in our house. It's so easy to do, and aside from being absolutely delicious, it makes the house smell wonderful! I've never tried with cinnamon, but will try to remember to take that suggestion from all the other commenters.

Delicious! I added some dill to the bread crumbs, and opted to bake rather than fry (375 degrees F / 190 degrees C for 30 to 40 minutes) for a healthier version.

Chicken with Lime Butter

This recipe is a long-time favourite of mine! When I first found it, though, I may have misunderstood the instruction to "drain excess oil", and found there to be too little sauce. I now keep the oil (in addition to the butter - ok, perhaps not a lean meal, but a great one) and find it works better. I often add a little extra lime juice and dill for extra flavour too.

Maple Baked Pork Loin Roast

I often found the maple flavour lost in recipes calling for maple syrup, but this recipe was absolutely fantastic. The pork was tender and tasty, and the maple flavour was just perfect!
