Scalloped Potatoes and Onions

Followed recipe to a T! Impressed no cream yet yielded a creamy absolutely delish dish & the low, long baking time = tender, yummy potatoes! A keeper 4 sure!!

Grilled Sausage with Potatoes and Green Beans

I make this at least 1x a month & roast indoors @400. I omitted the butter & added 1 red bell pepper. First, I seared sausage in a nonstick oven proof skillet w/some Worcester sauce then removed the sausage & added a little EVOO to the pan, 4 tsp. minced garlic & the green beans to soften them up a bit. If I don't have fresh, I use Birdseye Steamfresh green beans. Next, I mixed in my potatoes, onions & sliced red bell pepper. Add seared sausage to the mixture, tossing all ingredients to coat. Covered pan w/aluminum foil and baked for 40 min; removing foil last 20 min. stirring occasionally. The flavors were sensational!

Beef Noodle Soup

Total comfort food! I used dry, no yolk dumpling noodles, 5 c. Emeril's Organic Beef Stock + 1 c. of his Veg. Stock in place of bouillon & water. Didn't have stewing beef, so I substituted some left over Roast Beef that I cooked in my crock pot & added the last 30 min. with the noodles. Hubby & I ate this for dinner with a grilled cheese on sourdough & tomatoes with left overs for lunch! Yum Yum! A keeper for sure.

Sherry Apple Pork Chops

Sinfully delicious! Scaled for 2. Used 2 thick boneless chops browned chops in oven-proof skillet; added 2 sliced apples on top; doubled brown sugar, cinnamon & sprinkled on top, dot w/butter; substituted chick broth for sherry (didn't have on hand) & poured over all. Covered & baked 20 min. Removed chops & kept warm, thickened sauce w/1 Tsp. of cornstarch & chick broth. Next time will definitely use sherry! Hubby couldn't stop raving or eating this wonderful dish!

Chicken Florentine Casserole

Hubby LOVED it! Skipped 1st step. Sauté fresh spinach & mushrooms in a little butter then placed in bottom of my dish, placed uncooked chicken on top, added sauce & topped it off with real crumbled bacon (about 10 slices). Baked at 350 for 25 min. Removed from oven, topped w/1 C. mozzarella & baked 10 minutes at 350. Yummy!

Original Chex® Party Mix

Baked in oven @250 for 1 hour, stirring every 15 min. Used Crispix, Goldfish pretzels, Honey Cheerios instead of bagel chips, 1/2 c. cocktail peanuts, 1/2 c. cashews & doubled spices based on previous comments. Doubling the spices was key, otherwise this would have been a 5 star review! LOVED it!

Roasted Potatoes with Greens

Excellent! I used red potatoes cut into small pieces & sauteed them in an oven ready pan in butter w/garlic & onion to help soften them up (about 10 min.) before baking. I didn't have fresh rosemary, so I ended up using crushed rosemary along with 2 cups fresh spinach. Definitely will make these again ... Yum!

Chicken Breasts with Balsamic Vinegar and Garlic

SO delish! This is a fast favorite of ours & one I make at least 2x a month. I omit the flour & use sliced portobello mushrooms. Love to serve it with fresh baked asparagus & roasted red potatoes. A yummy dinner that can be on the table in 40 minutes or less (if you don't do roasted potatoes).

Cabbage Beef Soup

Delicious! I seasoned ground beef & sauteed with onions. Substituted 2 cans of petite diced tomatoes for the tomato sauce, & 3 cups of Emeril's Organic Beef Broth for bouillon cubes/water + 1 cup of chick broth. We like a brothy soup! I did leave out the cumin based on previous reviews & used all of a small head of cabbage. I did this on the stove top in a ceramic cast iron pot after bringing all ingredients to a small boil, then simmered covered for 2 hours on low. My hubby raved about it & I enjoyed it as well!

Grandma Ople's Apple Pie

OMGoodness but this was sinfully delicious! I pride myself in baking a truly outstanding pie, but let me tell you, this pie --- takes the award! And now my hubby asks for this all the time!! LOL The only exceptions I made were lightly sprinkling cinnamon on my apples then mixing the sauce in with the apples leaving just enough to drizzle over my lattice. I did cover the crust edge with foil until last 20 min. And I used Golden Delicious Apples, always my choice when it comes to pie baking! Try this, you won't regret it!

Day Before Mashed Potatoes

Unbelievably yummy! Made EXACTLY as written except made the same day & I used just a dash of the onion powder (youngest daugh hates onions) & I'm happy I did. There was just a hint of onion flavor, enough as not to overpower all that other yummy goodness. Oh, I did use Yukon Golds. Definitely making these again!

Turkey Tetrazzini II

Hubby & I loved it 2! Calculated for 4 servings, added chopped onion, dash of black pepper to the butter then went ahead adding flour/milk/broth. Used grated Locatelli & shredded Parm cheeses. Mixed in a bag of Bird's Eye Steamfresh Peas (cooked) and topped with FRENCH'S French Fried Onions. Baked 35 min. Yummy!

Blueberry Crisp II

Crispy Rosemary Chicken and Fries

Yum! Used chicken breasts (cut in strips) and mixed fresh seasoning with red potatoes and EVOO. I then removed the chicken & roasted the potatoes @375 for 30 minutes on a cookie sheet, turned potatoes over to brown other side & added the seasoned chicken strips to roast together the last 30 min. turning everything over once more before the last 15 minutes for extra crispness! Potatoes were perfectly crisped & chicken moist & tender! Definitely will be making this one again!

Dad's Pan-Fried Green Beans

Easy, fast and tasty! Made this for the 1st time last nite & substituted fresh green beans for a bag of Birds Eye Steamfresh Green Beans. Substituted EVOO for the sesame oil & cut soy sauce to 2 tbsp. Was a HUGE hit with hubby. Definitely putting on my recipe rotation!

Tomato, Basil, and Feta Salad

FAB-u-lous! Used grape tomatoes along with red onions, cucumbers & fresh asparagus. No fresh basil on hand, so used dry and had to add a bit of honey (my balsamic vinegar wasn't the best) and marinated everything except feta cheese for about 5 hours b4 serving. LOVED it! Will make again & again this summer, using fresh basil!

Camp David Spaghetti with Italian Sausage

dElish! Pleasantly surprised out how good this sauce turned out!! I did scale this down to a serving for 2 using 1 large can of peeled whole tomatoes & a small jar of Prego 3 Cheese Spaghetti Sauce. I didn't remove my sausage casing, but rather cut them into smaller bite-size pieces & found them a little bit tough, so next time, will definitely remove casing & make them into meatball size!

Tasty Green Beans

Sour Cream Pound Cake

Talk about quick and delicious! I loved that this desert uses so few ingredients and can be ready to enjoy almost as soon as it comes out of the oven! I baked mine at 350 for approx 55 min. Eggs & butter should be at room temperature, and I cut sugar to 1 cup and added a dash of vanilla extract. Served with slice peaches one day, then fresh sliced strawberries the next.
