Italian Meatball Sandwich Casserole

I enjoyed this rustic dish. Next time though, I would make my own meatballs, as these are not memorable. (And although I love green onions, they didn't seem to stick well, it was odd.) I also used my own homemade spaghetti sauce (it has plenty of garlic), and therefore left out the last addition of garlic. I also left out the water (per reviews) - and the bread was not soggy whatsoever. The substitution of the mayo with ricotta cheese is really a good idea, and goes very well with the whole idea of the dish. I quickly/lightly heated the cheese mixture in the microwave to make it easy to drop onto the bread in teaspoons. I did not concern myself with the cheese being perfectly spread out, just did even clumps throughout. This was great.

Cheesy Ranch Potato Bake

Delish. I used 1 tsp chili powder, because I use the chili powder I get at the Indian grocery store, and it was still HOT. I also added in 1/2 of a chopped onion mixed in with the potatoes. Per previous reviews, I halved the butter and used lite Ranch. This is a keeper.

Chicken Korma II

Very easy and the curry is tasty. The ease gives it 4 stars. For some reason, I didn't find the spicy/flavor to catch into the meat itself, but the taste of the curry itself is good. Used ginger and garlic paste, as we always have it at home. I also did not soak the cashews and nor use any water. I also omitted the bay leaf. Topped with chopped cilantro. I did not find this curry watery and did not end up using the corn starch. This was not mild for us, as all our spices come from the Indian store itself and are spicy-full!

'Out of Salad Dressing' Salad Dressing

I was literally out of salad dressing, and in a pinch, found this recipe. Did not refrigerate for the 8 hours, and used immediately. Initially, I did not care for it and thought would not make again. However, the next day, this dressing tasted much better.

Daddy's Shrimp Toast

I was really excited to try this recipe. Don't know what went wrong, but we did not like this. Baked instead of fried, but I cannot imagine that would affect it SO much. Overall, t was very bland for us, and would not attempt again.

BBQ Chicken Pizza I

LOVE this. Cooked chicken in olive oil with a tad of the bbq sauce, garlic powder, onion powder, salt, and pepper, until cooked. (We need flavor everywhere!) Also used the Pillsbury thin crust. Did not used hickory/smoked anything, due to convenience, but still tasted awesome. Would reduce sugar next time to suite husband's tastes.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

For some reason, we did not enjoy this mix of flavors. I did omit the pork from this dish because we had a separate pork dish. I cannot imagine this would make so much of a difference?

Oriental Pork Chops

This recipe sounded so good. I marinated the chops over 24 hours. Somehow, we thought flavor was lacking. I may choose thinner chops or fry instead the next time I attempt pork chops.

Sherry Chicken Curry

Husband loved this. I thought it was just alright. Didnt wow me. But very simple to make. I marinated the chicken in a touch of soy sauce, onion & garlic powder, and cayenne pepper.

Thai Noodles

Husband thought it was 4 star. Turned out a tad soggy, I probably overcooked the noodles. Also, I think the type of peanut sauce you use affects the taste. I may try making it as another reviewer suggested.

Goof Proof Coconut Curry Chicken

I used chicken breast and doubled the recipe. I also used fresh garlic to fry/cook the chicken. Instead of curry sauce (did not have it), I made a paste of 1/2 tsp chili powder, 2 tsp corriander powder, 1/2 tsp turmeric powder, and 1 tsp garam masala. Also used chicken broth instead of water. Would make again, but will marinate the chicken next time in some spices.

Chicken Tinga Tostados

I used rotisserie chicken. This is delicious. I accidentally halved the recipe, but not the can of chipotle peppers. Super spicy. It was fine, for our spicy taste, but would still try to halve when I make again! Made with "Rich Mexican Corn" that I found on this site to use as a side dish...we ended up using that as a topping too. So Good.

Rich Mexican Corn

Used 1/2 and 1/2 green and red bell peppers and 6 jalepenos with seeds. yummy and very spicy. would be very good still with less jalepenos. Made as a side dish for the Chicken Tinga Tostadas on this site. We actually ended up using this as another topping on the Tostadas.

Curried Coconut Chicken

This is a very good & easy base recipe. I did reduce the sugar by half to suit my husbands taste. And I used mild Rotel for the canned tomato part. The curry itself tastes good. We did feel the chicken was on the blander side. We are Indian and prefer more spice. Will try to tweak by marinating the chicken next time.

Super-Simple, Super-Spicy Mongolian Beef

My family loved this, but I was disappointed for some reason. I used only 1/3 of the sugar (because I also made honey walnut shrimp from this site and did not want 2 sweet dishes) - don't know if that made a difference. I thought that it was too salty and lacked something. I also think I would prefer a more thicker sauce...maybe adding some corn starch would help in that area. I would not make this again. But the preparation was super easy.

Honey Walnut Shrimp

Very good. The batter ended up being a tad more firm or thick? (once fried) than I prefer. I dont know if this is because I used regular rice flour and not mochiko?? (I don't even know if there is a difference because I am not familiar with the latter.) Or because maybe over-fried? Anyway, it was still very good and I would make it again (and I used reduced-fat mayo.)
