Farro Salad with Asparagus and Parmesan

This was a real hit at a dinner party. I did not soak the Farro for 12 hrs. as the recipe stated. Just boiled according to package directions. Super easy.

Mexican Blackened Corn

Excellent! Made it for a dinner party and everyone had seconds and commented how great it was. I couldn't find the cotija cheese, so I used feta cheese. Also, served at room temp. This recipe is a keeper.

Mexican-Style Goulash

Quick, easy, yum-o, comfort food! Only change I made was to use chipolte chili powder in the place of regular chili powder, I like the smokey flavor and kick it provides.

Tiramisu Layer Cake

A little time consuming, but delicious! I substituted instant espresso for the instant coffee, as I took others advise, also used espresso instead of the brewed coffee. If you love Tiramisu, you will love this.

Garlic Chicken Fried Brown Rice

Quick and easy for week night dinner. I used 2 boneless, skinless chicken breasts cut into bite size pieces. And, to prevent rice from turning into mush, make rice night before and add cold rice to step #3. I also sprinkled completed dish with a little red pepper flakes to add a little kick.

Lemon Cooler Cream Cake

Easy and refreshing, but I agree with previous cook who stated that topping tasted artificial. Next time I am going to omit lemon gelatin and add lemon zest to vanilla pudding & whipped topping mixture.

Slow Cooker Carnitas

Very easy. After cooking meat in crock pot. I shredded meat on cookie sheet, sprinkled with garlic salt and chipolte chili powder, then drizzled sparingly with olive oil and baked in 400 degree oven for 15 minutes, which made the edges of the meat crispy. Made good burritos.

Chili Rellenos Casserole

I made a few changes based on other chefs suggestions and it was super. I added an additional egg, more cheese, and substituted mild enchalada sauce for the tomato sauce. Delicious! Everyone at our dinner party raved about it. Tastes just like you would get at your favorite Mexican restaurant.

Avocado Feta Salsa

Was a real hit at dinner party. Super easy. I do agree with other chefs who suggest adding cilantro instead of parsley. I also added some Morton's Hot Salt for a little kick, next time will add a couple jalapeno peppers.

Baked Mashed Potatoes

Made these for Thanksgiving and they were by far the best mashed potatoes I've had. Everyone raved about them. In addition you can make it ahead and bake about 1 hr prior to serving, and they come out piping hot and fluffy. I followed the recipe to a "T". Thanks Nancy F.

Peanut Butter Cupcakes

Excellent! These were a real hit at work potluck. Made two changes, and they still turned out great. I used veg. oil instead of shortening, and I omitted the cream of tarter, because I didn't have any. I frosted them with the Chocolate Frosting I, that I found on A.R. Yummy! Give them a try, you won't be sorry!
