Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

These were AWESOME, and totally easy to make ahead, and throw on the bbq at the last minute. I made extra, thinking I'd for sure have leftovers, but no way, not a single rib was left behind. Should note that we applied a dry rub before baking them in the oven. Fabulous!

Fig and Olive Tapenade

This was a big hit at the party! Like another reviewer, I used fresh figs (double the dried-fig measure and half the water). It takes a while to reduce. Once the other ingredients are added, it's absolutely imperative that the mixture is left to sit overnight. Served over softened cream cheese, with Lesley Stowe brand crackers. So! Good! I know there would only be dried figs available in the fall/winter, but with the walnuts on top, this would look especially lovely at a Thanksgiving or Christmas table.

Garlic Parmesan Orzo

So good and easy! I've never been a huge fan of macaroni and cheese, so this will fit the bill. I took another reviewer's suggestion and threw in a handful of fresh spinach, which not only qualified as a serving of vegetables, but also gave the dish a bit of colour (the parsley the recipe calls for would do the same)

Pork Tenderloin with Stuffing

Yum! This was delicious! It wasn't very bright of me to make this for the first time on a busy weekday after work. With all the different stages (make the stuffing, flatten the tenderloins, brown the tenderloins, assemble the tenderloins, bake for an hour) it wasn't a quick meal to prepare . . . but it was deceptively easy, and DANG, but it tasted deluxe! I added chopped mushrooms, a little splash of chicken broth, and some additional herbs. Served this with Baked Whole Cauliflower and Garlic Parmesan Orzo (recipes on this site).

Lemon Grass and Chicken Summer Rolls

Brought these to a summer afternoon baby shower, and everyone loved them! They're pretty, light, healthy and fresh-tasting. (I omitted the peanuts, but provided peanut sauce for dipping, as well as Thai sweet chili sauce.) I used Mediterranean basil because I didn't have Thai basil, but everything else was as written, and they were delicious! Made the filling the night before, and put them together in the morning. Once I rolled them up, I covered the platter they were in with damp paper towel, and then plastic wrap, for transport to the party. They sat in the fridge like that until I sliced them in half for serving.

Philly Steak Sandwich

Wow! The spiced meat was delicious! I used chewy Calabrese buns, because the store was out of hoagies, and (after reading up on the "traditional" Philly Cheesesteak) I did one batch with provolone cheese and another batch with Cheez Whiz. We preferred the provolone. Oh, and I used the garlic mayo from the other allrecipes cheesesteak, which elevated the sandwich to a whole new level. Fabulous! Will definitely add to the regular rotation!

Easy and Elegant Pork Tenderloin

I'm not sure I should give this five stars, since I added spices to the panko bread crumbs I used according to some suggestions, but as a "foundation" recipe, it was great, and really allows for experimentation. Sometimes, I just need to know what temp. to cook it and for how long! This is that. Simple, moist and good!

Hamburger Steak with Onions and Gravy

This was great! Cheap, easy, and I had all the ingredients in the pantry. Served this with Roasted Garlic Cauliflower and Oven Roasted Red Potatoes (both Allrecipes), and doubled gravy per reviewer suggestions. Would it be politically incorrect to call this dish a Man Pleaser? I liked it, sure, but hubbie, brother and dad were drooooling: meat, potatoes, onions, gravy, what's not to like?!?

Baked Buffalo Wings

I put these in the fridge, coated with the flour mixture, all day. I cook them on racks on baking trays, so that the juices drip down and away (I've tried doing as the recipe suggests, as well, but everyone preferred the "racked" wings, because they were crispier). These taste fabulous, and with bleu cheese dressing, even better. This will be a regular sports-night meal....!

Burrito Pie

This was great, and easy, and it will go into regular rotation! Added pack of taco seasoning to the beef, and layered refried beans between two or three tortillas instead of mixing it into the meat . . . wonderful taste, satisfying dinner, super leftovers!

Excellent Broccoli Cheese Soup

This was indeed excellent soup, tasty and easy to make. I used 1% milk, slightly less butter, 1/3 cup cornstarch instead of flour, and sharp, aged cheddar in lieu of processed cheese. I doubled the broccoli (lightly steamed in the microwave before adding) and sauteed chopped shallots and a couple cloves of crushed garlic into the melting butter, as recommended by some reviewers--and I'm glad I did. Next time, I think I'll even add some steamed cauliflower. My significant other lamented that there was no meat in our soup 'n' salad meal, but two-bites-later he wasn't complaining, and happily took the leftovers for lunch. Yummy dish, and I will make it again!

Crispy Rosemary Chicken and Fries

I rarely give five stars, but this was too tasty and too easy to deserve anything less! I used skinless boneless thighs; added lemon juice and real garlic, as suggested; and the fresh oregano was so delicious I consider it essential. Lots of salt and pepper, a sprinkle of paprika for colour, and this was a darned fine meal. Significant other loved it, too!

Wow, these are delicious! The dough makes a soft "hamburger-bun" shell around the tasty filling. So good I burned my mouth trying to steal bites before they were cool enough to eat! I followed the advice of a couple reviewers, adding one clove of mashed garlic, and some celery seed. I also used a ground beef/veal/pork mixture, which turned out nicely. Baked some immediately, and put the rest into the freezer for future baking. Mmmmm! Lots of work, but definitely worth it.

Lemon Mushroom Herb Chicken

This was fabulous! Followed recipe exactly and added mushrooms. Easy to make! Lots of delicious sauce, so I served this with homemade spaetzle (German egg noodles) and together they were divine. Will definitely add to the regular rotation. Significant Other said he doesn't like capers, but I do, so I told him to pick them out ... in the end, he got over it, ate the whole thing, and said he loved it.

Breaded Brussels Sprouts

Like Catthorn, I'm trying to eat seasonally and inexpensively. Plus, cruciferous vegetables are as nutritious as all get-out, so I'm attempting to add them to my diet. This recipe is delicious, buttery, crunchy, and in no way bitter. Confirms that brussels sprouts aren't just for holiday dinners! Can't wait to try the recipe with b. sprouts and mustard sauce....

Horseradish Deviled Eggs

I made these for my office Christmas potluck this afternoon, and they were the first item off the buffet table. I only managed to get one of them before they were gone! Followed the recipe exactly, and it couldn't be easier--no chopping at all! Squeezed the filling from a sandwich bag with a snipped-off corner, as a few reviewers suggested (great idea, because I brought the filling, stored in the bag, to the office, and then stuffed the eggs before serving). One note: I used "extra hot" horseradish, but it was in no way extreme or unbearably hot with that much mayonnaise to support it. I will definitely make these again!

Grecian Pork Tenderloin

There's very little I can add to previous reviews, except to confirm that this is a simple, delicious marinade, guaranteed to please everyone around the dinner table. I'm very glad I used fresh lime juice, because I don't think lemon would have been nearly as good . . . . The next evening, I put thin slices of cold tenderloin on a green salad with feta cheese and red-wine vinegar dressing, which was equally as tasty. Two easy hot-weather meals I'll be making again!

Italian Kale

In the past, I steamed my kale (chard, spinach, etc.), then transfered it to a frying pan with garlic butter, and then dressed it on the plate with balsamic vinaigrette . . . so imagine how happy I was to see this simplified version of a side-dish I enjoy so much (albeit sheepish about not having figured out the "one pan" method for myself. Seems so obvious now!) Anyway, this tastes wonderful: fresh greens are so easy and good for you!
