Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

These were AWESOME, and totally easy to make ahead, and throw on the bbq at the last minute. I made extra, thinking I'd for sure have leftovers, but no way, not a single rib was left behind. Should note that we applied a dry rub before baking them in the oven. Fabulous!

Baked Buffalo Wings

I put these in the fridge, coated with the flour mixture, all day. I cook them on racks on baking trays, so that the juices drip down and away (I've tried doing as the recipe suggests, as well, but everyone preferred the "racked" wings, because they were crispier). These taste fabulous, and with bleu cheese dressing, even better. This will be a regular sports-night meal....!

German Red Cabbage

I've been making a different red cabbage recipe for years, and while it was alright, it never added up to the quality we'd get at our favourite German restaurant. Well, this recipe resulted in cabbage tasting that good and BETTER! I can't believe what an improvement the spices make, and all that without an excessive amount of fat or bacon, which is also nice. Basically, this is my new go-to recipe for this dish ... awesome!

Vegetarian Green Chile Stew

I made this for a new mom who was craving a "root vegetable stew" for a cold winter's night. Because she had a yen for something more than just potatoes, I used one potato, one sweet potato, one parsnip, and one rutabaga/turnip. No corn. I asked her to report back to me with a review: she said it was great, just what she wanted, nice spice level (used two cans, not three) and she threw in a can of drained chick peas with the leftovers because it worked for her! Thanks Mrs. Hinman!

Lemon Mushroom Herb Chicken

This was fabulous! Followed recipe exactly and added mushrooms. Easy to make! Lots of delicious sauce, so I served this with homemade spaetzle (German egg noodles) and together they were divine. Will definitely add to the regular rotation. Significant Other said he doesn't like capers, but I do, so I told him to pick them out ... in the end, he got over it, ate the whole thing, and said he loved it.

Unbelievable Chicken

It was just fine. Didn't ruin my chicken, but as there are a dozen other unbelievably good marinades I prefer to this, I won't be making it again. Thanks for the chance to try something new.

Lemon Grass and Chicken Summer Rolls

Brought these to a summer afternoon baby shower, and everyone loved them! They're pretty, light, healthy and fresh-tasting. (I omitted the peanuts, but provided peanut sauce for dipping, as well as Thai sweet chili sauce.) I used Mediterranean basil because I didn't have Thai basil, but everything else was as written, and they were delicious! Made the filling the night before, and put them together in the morning. Once I rolled them up, I covered the platter they were in with damp paper towel, and then plastic wrap, for transport to the party. They sat in the fridge like that until I sliced them in half for serving.

Fig and Olive Tapenade

This was a big hit at the party! Like another reviewer, I used fresh figs (double the dried-fig measure and half the water). It takes a while to reduce. Once the other ingredients are added, it's absolutely imperative that the mixture is left to sit overnight. Served over softened cream cheese, with Lesley Stowe brand crackers. So! Good! I know there would only be dried figs available in the fall/winter, but with the walnuts on top, this would look especially lovely at a Thanksgiving or Christmas table.

Crispy Rosemary Chicken and Fries

I rarely give five stars, but this was too tasty and too easy to deserve anything less! I used skinless boneless thighs; added lemon juice and real garlic, as suggested; and the fresh oregano was so delicious I consider it essential. Lots of salt and pepper, a sprinkle of paprika for colour, and this was a darned fine meal. Significant other loved it, too!

Braised Balsamic Chicken

Mmmm, delicious, and the man of the house really enjoyed it, too. I liked that it was simple, and used ingredients I already had, plus it was fast. The balsamic vinegar reduces, and gets sort of thick and syrupy; there's a really pleasant tanginess about it. I served this with Garlic Parmesan Orzo, and will happily make it again.

Mahogany Chicken Wings

I appreciate knowing how long to bake wings and at what temperature, but I probably won't use this marinade again. The wings were nicely glazed and sticky, but I found the molasses flavour overpowering (and I really like molasses, even ate some with bread 'n' butter while I waited for the wings to cook!) Also found them a bit too salty; perhaps low-sodium or less soya sauce?

Baked Penne with Italian Sausage

Easy to prepare, filling, but unremarkable. I won't make this again. Much prefer spaghetti, or lasagne. This seemed like too much penne, too little sauce and hardly any flavour.

Swedish Meatballs

Delicious! Easy to make, relatively quick, and no processed ingredients is a major plus. I added four cloves garlic to the meatballs, and doubled the gravy, and I'm glad I did. Served over garlic mashed potatoes with broccoli, mmmmm! Leftovers even tastier!

Layered Chicken and Black Bean Enchilada Casserole

The husband and I both really liked this. In the past, I've made the very similar Burrito Pie (from this site) but I wanted to try something lighter and healthier (i.e., chicken instead of beef, black beans instead of refried beans). Tasted yummy, and he said it was even better for lunch the next day.

That's-a Meatloaf

While the meatloaf itself is not exceptional, the filling certainly elevates the recipe. I might even skip the ham next time and just put a layer of provolone in there!

Oregano Cubed Potatoes

I loved these potatoes! Served with Greek pork tenderloin (from allrecipes.com) and tzatziki. Used fresh oregano, and parsley. Really enjoyed the zingy lemon flavour!

Garlic Parmesan Orzo

So good and easy! I've never been a huge fan of macaroni and cheese, so this will fit the bill. I took another reviewer's suggestion and threw in a handful of fresh spinach, which not only qualified as a serving of vegetables, but also gave the dish a bit of colour (the parsley the recipe calls for would do the same)

Pork Tenderloin with Stuffing

Yum! This was delicious! It wasn't very bright of me to make this for the first time on a busy weekday after work. With all the different stages (make the stuffing, flatten the tenderloins, brown the tenderloins, assemble the tenderloins, bake for an hour) it wasn't a quick meal to prepare . . . but it was deceptively easy, and DANG, but it tasted deluxe! I added chopped mushrooms, a little splash of chicken broth, and some additional herbs. Served this with Baked Whole Cauliflower and Garlic Parmesan Orzo (recipes on this site).

Baked Whole Cauliflower

I would have given this four stars, except the 20-minute steaming time turned the head of cauliflower into mush. The topping was great, however, so next time I make this, I'll keep the steaming part of the recipe down to ten minutes.

Philly Cheesesteak Sandwich with Garlic Mayo

I used the garlic mayo from this recipe, but added it to the spiced meat from the site's other Philly Steak Sandwich recipe. Together, they made for one of the best sandwiches I've had in a long time! Mmmmmmm!
