Layered Seafood Dip

This was delicious, for the meat, I just used a package of imitation crab legs. It was a hit at the party. I used tangy cocktail sauce which gave it a bit of a bite.

Grandmother's Oatmeal Coconut Cookies

Good recipe. I did not add the white sugar, the recipe turned out good, and was plenty sweet. I added about 1/2 cup of chocolate chips. Will make it again.

To Die For Blueberry Muffins

I was pleasantly surprised. My batter was quite thick, almost like bread dough, that may be because i cut oil in half, and substituted apple sauce. I had to put the globs of dough in muffin tin. They were perfect, they were plump and flavorful. Substitutions: i doubled recipe, but only used one cup of sugar, I added cinnamon to my flour mixture as I like the harvesty flavor, i didnt use butter on top, i made a mixture of sugar, cinnamon, and oats....yummy!

World's Best Potato Salad

This was great! Because of health issues, I didn't add the sugar, but in it's place added a dropper full of liquid stevia, and I only used about 1/4 of the recommended mayonnaise (and the light mayo). I also didn't add the butter. The recipe turned out perfect and was a lighter version. I added one red pepper diced. I brought it on the boat, and all the guests loved it!! Will keep this recipe.

Crumb-Topped Rhubarb

I would give this 4.5. It was easy to make, and the flavor was great. I doubled the recipe and cut my rhubarb up small, so it fit into a 9X13 pan easily. What I really liked about it was that there wasn't as much butter used as normal crumbles, in fact, I used a few tablespoons less butter than asked, and it still cooked perfect. I will make again.

Gingered Carrot Soup

It was not something to write home about, I agree with some of the other reviews, the ginger is way to powerful, I would suggest cutting the amount to 1/8 cup. I added more cumin powder as it was a little bland. This recipe could be boosted up if dill was added to the recipe. Wouldn't make it again.
