Black Bean Brownies

These were okay as written (more like cake though), but our family liked them way better with 1 less egg, 1/3 cup cocoa and 1/2 cup dark brown sugar. More "brownie like" that way. The coffee is a great addition!

Best Toffee Ever - Super Easy

Okay... WAY too much butter for the sugar ratio - I wound up pouring off a ton of it. I followed the suggestion to cook to hard crack (300F) and I'm glad I did! Next time I'm going to try the Joy of Baking's ratio of 1.5c butter : 2c sugar and see how that goes.

Portuguese Burnt Sugar Candy

Add a tablespoon of vinegar or 1/4 tsp citric acid powder in with the vinegar for a tangier taste. I loved the bittersweet edge on these as written though!

Apple Pie Filling

DON'T use cornstarch if you're going to freeze this - it will separate and turn into a spongy glob. Choose tapioca starch or sweet rice flour instead. Otherwise it's a tasty pick me up in February!

Faux Jerk Chicken

Delicious, especially as a marinade for tofu (I don't eat meat). Why is is "faux" jerk though? Tastes exactly like the ones I had in Jamaica (except maybe missing ginger).

Intoxicating Onion Soup

Way too much wine for our tastes as written, bade again with 1 cup of dry Bordeaux, 3 cups of beef stock and 1 cup of water and it was perfect. Love the pure onioniness though!

Zucchini Brownies

These didn't disappoint flavour-wise - but I have to agree with the others who said this was more of a cake than a "brownie". I even reduced the leavening to try and "fudge it up" a bit (my standard fudge brownie has none). Even then, delicious, and my glut of zucchini is gone!

One Bowl Chocolate Cake II

A good basic chocolate cake, as it implies, but too sweet for our tastes and any cupcakes I've made with it are flat as pancakes. If you're planning to decoratively frost them that's not a problem, but there are no nice "domes" that usually occur from cupcakes made with a standard cake recipe.

Sayguh's Spicy Olive Oil, Tomato and Lime Pasta Sauce

I LOVED this!! Definitely a nice change from the usual. I did cut WAY down on the oil though - used more like 2 tbsp instead of a half cup, and because I'm a garlic head I added 3 cloves minced garlic to the original saute. It really worked well over fish and rice too!

Sour Cream Chocolate Frosting

This recipe as written is great for people who like "bakery" style buttercreams that are crazy sweet. We don't, so like another reviewer I used about 1/2 - 2/3 the sugar called for, and used 3/4 cup semisweet and 1/4 cup UNSWEETENED chocolate. Made the richest, most delicious frosting! Thanks for the inspiration!

Vegan Carrot Cake

Like the other reviewer, this was way too sweet. 1 cup of brown sugar was perfectly fine, even for sweet-tooth kids. Also too much baking soda - we got an aftertaste. Will try half the soda and 2 tsp baking powder instead like my other cakes - there's no acidity in the recipe so I don't know why the soda's there! Also, 1 tbsp of cloves is entirely too much, maybe 1 tsp? I substituted the soy flour for an equal amount of ground hazelnuts and left out the almonds, currants and tapioca starch. The consistency is a good one though.

Carrot Soup

My Kitchen Prod teacher almost died when she tasted this soup... the cayenne completely obliterates any carrot flavour along with your tastebuds! We wound up having to drown it out with a huge amount of broth, and then it still lacked any carrot taste.

Creamy Potato and Leek Soup

We made this as part of my Kitchen Production class at school - being experienced in the kitchen I saw how little liquid the potatoes had to cook in and wound up adding 2 1/2 cups more. The poor other group made it as written and wound up with potato glue. The recipe needed salt and pepper badly, too, and definitely could have used less fat for sauteeing the leeks. After my alterations, it was a good soup, but as written, you'd need a fork to eat it.

Honeyed Habanero and Toasted Garlic Tartar Sauce

Inedible as written: I used one habanero and even then I was the only one who could eat it. Halving the mayo and adding equal amt of yogurt helped tame the heat a bit more.
