Easy OREO Truffles

Easy and sooooooooo decadent! I refrigerated the truffles before coating in chocolate and it made it easier to deal with. For about half of the truffles, I also added some peppermint extract to the chocolate for an even more amazing treat.

Chicken Breasts with Balsamic Vinegar and Garlic

Simple and delicious! I made it as is, and it was great. I will make a few changes next time, but not many. 1) I will probably skip the flour on the chicken - it didn't really add much and, as noted by others, it did make it a little slimy. 2) I'll brown the chicken on both sides, remove it from the pan and deglaze with the broth/vinegar. Then I'll add back the chicken and put in the mushrooms. 3) Double the sauce and mushrooms. I served the chicken with pasta, and there wasn't enough to drizzle over the pasta and chicken for all 4 servings.

Crustless Spinach Quiche

Super good and easy! I added some chopped garlic and salted the spinach and onions in addition to the 1/4 tsp called for. I think it would have been pretty bland without it. I will definitely be making this again!

Chipotle Honey Roasted Peanuts

This was a very good, easy recipe. We like our food spicy, so I doubled the spices as other reviewers suggested. (Very spicy, but very good). I also couldn't find chipotle chile powder, so I used a mix of cayenne and normal chile powder. The chile and garlic powder add a good bit of a smoky/savory flavor that I personally didn't like. Next time I will just use cayenne. Overall, however, these were a big success and I will definitely make it again!

Thai Spicy Basil Chicken Fried Rice

The oyster sauce in this recipe was overwhelming and made it far sweeter than the recipe we are used to at our local Thai place. Next time, I will probably eliminate the oyster sauce and replace it with 2 Tbls soy sauce as another reviewer suggested. I will also cut the oil by at least half, finely chop/dice the chicken, and increase the basil.

Annie's Fruit Salsa and Cinnamon Chips

This recipe is delicious. My entire family loves it and it's become my signature dish for family gatherings. I use Granny Smith apples and replace the raspberries with blueberries. But I've tried it with other things, and it's always good. The only big change I make is to bake the tortillas for much longer than recommended to make them crispy. I usually sprinkle one side with the cinnammon/sugar and bake for 8-10 minutes. Then I flip them over, sprinkle the other side and bake them for another 10-12 minutes. Otherwise, they come out a little rubbery. But overall, still delicious!

Salsa Chicken

This was so easy and good. I used more seasoning than called for (about 1/2 a packet) and, as recommended by other readers, just put it in a plastic bag to coat the chicken. Simple, simple, simple and very tasty. The chicken would be great in fajitas, too.

Chocolate Pretzel Rings

This was a cute, fun and easy recipe. Like other reviewers, I used the Rolos. I found that the caramel was just a bit too much, so I cut the rolos in half and put them on top of the pretzels (caramel side facing up, unless you want a nasty, sticky mess). I topped mine with Reese's pieces. I think peanut m&m's would also be really good. Salty, sweet, chocolatey...what could be better?

Easy Banana Bread

Absolutely delicious. Following recommendations from other reviewers I added 1 tsp. cinnamon, 1/2 tsp. nutmeg, and used 1 cup white sugar and 1 cup brown sugar. I also coated the pans with cinnamon and sugar and sprinkled a little on top. It was wonderful! Moist, very banana-ey, and even better the following days! Out of curiosity, has anyone tried using butter-flavored shortening?

Japanese Onion Soup

Not bad--though I had to add extra salt. Although other reviewers said that the flavors really came out with the cooking time, I thought it was a little bland, and that an extra 5-10 minutes wouldn't have hurt. It's definitely on the right track...maybe next time I'll try adding a little more garlic. Any other ideas?

Quick Rice Pilaf

I should have read the other reviews before making this. Beware--there is way TOO MUCH PEPPER. I have no problem with spicy foods, but the flavor of the pepper was overwhelming--it's all you can taste. I will probably try this again, but cut the pepper by at least half or maybe entirely.

Slow Cooker Beef Stroganoff I

This was so easy and absolutely fantastic!!!! Definitely follow the changes recommended in these reviews (extra can of soup, extra sauteed mushrooms, less cream cheese, add sour cream etc, etc.) Even my super-picky husband adored it. Wonderful!

Slow Cooker Chicken Taco Soup

This recipe was very simple and quite good. My husband and I prefer our food super spicy, so I added an extra packet of taco seasoning and some cayenne pepper. I also added some garlic salt for a little more flavor. Next time I think I'll nix the beer (the flavor was a little overpowering) and only use one can of beans (it was pretty laden--much more chili than soup). But I'll definitely make it again!
