Erin's Indonesian Chicken

Absolutely loved this recipe! This is by far the best peanut sauce recipe I've ever found. I followed the directions exactly except I served it over brown rice. The only thing I might do differently next time would be to add more veggies, perhaps sliced red pepper, snow peas, and maybe baby corns? This is a true winner and is definitely one of my top Allrecipes favorites!

Barbecued Meatballs

Just didn't love these. I found them a bit bland and a little on the dry side. Maybe adding a little more liquid to the bbq sauce would have helped.

Prosciutto and Parmesan Pinwheels

These are very good. I made them as the recipe said but had to increase the cooking time a lot. More like 25 min. Next time I make them, I think I'll serve them with a honey-mustard dip/sauce.

Asian Beef with Snow Peas

I really enjoyed this dish. I used sirloin, which I salted and peppered. Next time I might season it a bit more beforehand. I also tripled the sauce ingredients as another reviewer recommended. If you like sauce for your rice or noodles, definitely triple the recipe. Also, you can easily add any of your favorite stir fry vegetables to this. I added red peppers, but would also like to try it with broccoli, baby corns, or even green beans or asparagus. You can reallly cater this to your tastes. Very easy (I followed the directions exactly), very delicious, very impressive. Thanks!

Feta Chicken

This is EASY and TASTY. I agree that it would serve up nicely for a dinner party. I dipped the chicken in egg before rolling it in breadcrumbs. I served it with a pasta side but it would go just as well with rice or even just veggies or salad. I will definitely make this again. Thanks!

Pumpkin Cake II

I rated this recipe 3 stars when made as is. Having read the other reviews though, I decided to tweak it a little. I used spice cake mix, 1/2 c. sugar, omitted the cinnamon, and used a whole can of pumpkin. This modified recipe I would definitely rate 5 stars. I made it for Thanksgiving and it got rave reviews from my guests. Easy and delicious! I made a cream cheese glaze for it, but I think that was too much. Next time I'll go with a simple dollop of cool whip. I will definitely make this again, often!

Banana Crumb Muffins

WOW. These are fantastic. I added 1 tsp. vanilla like some other reviewers suggested. I also used whole wheat flour and about 3/4 c. of ground walnuts. They are still light and fluffy and so delicious. Oh, and I got 12 good-sized regular muffins instead of the 10 the recipe states. You can't go wrong with these muffins! EDITED TO ADD: I have also made these into banana bread (baked at 350 for about 40 min). The crumb topping is DELICIOUS.

Abby's Chicken Rollatini

Love this! I've made it twice and the second time perfected it, I think. After pounding the breasts, I cut them in half to make eight smaller rollatinis. Like another poster recommended, I covered them with foil for the first 30 min, then removed foil and baked another 8-10. The Penne Russo a la Vodka recipe on allrecipes is excellent with this. I served the vodka sauce over the chicken and over a side of pasta. It's a fantastic pairing! Definitely estaurant quality.

Penne Russo a la Vodka

This is very good. I paired it with Abby's Chicken Rollatini and it was fantastic. I used half and half instead of heavy cream and it was fine. Next time I think I would increase the prosciutto. Great recipe!

Whole Wheat Honey Bread

I received my very first bread machine today and this was the first recipe I tried. I've never been successful making yeast breads/rolls, so I was hoping a bread machine would help by doing the tricky part. What a success! I love whole wheat bread and this is excellent! It's very soft and fluffy. The crust is thin and crisp. This is excellent sandwich bread. I followed the directions exactly but added 3T of vital wheat gluten. It's so great to have a tasty authentic whole wheat bread, as in it's made with 100% whole wheat flour. I will make this again and again.

Quick Chicken with Asparagus and Provolone

Fantastic! I went out on a limb and made this for company without ever trying it first. It was easy, delicious and looks impressive on the plate. I needed only one egg to dredge the breasts in. And, like the other reviewers, I used much less broth, probably only 1/2 cup. I also used fresh asparagus. No need to saute or steam beforehand, it steamed perfectly in the 15 min. stated in the recipe. Also I waited till the very end and then laid the cheese on top. It melted quickly in a minute or two. I can't wait to make this again! It is so good and super fast!

Cha Cha's White Chicken Chili

This was very good. I agree with those who claim it is more like soup than chili. In an effort to thicken it up, I pureed one can of beans and added 1 T cornstarch. I think it contains too much broth to actually be "chili," but it's still very good. Because I don't like very spicy foods and I have two young kids to please, I omitted the jalapenos and used just a dash of cayenne. I also added about 3/4 c. frozen corn. Very tasty, excellent for a chilly night.

African Chicken Stew

Loved this recipe! My husband was a Peace Corps volunteer in Guinea for two years. He said this peanut sauce really brought him back to the west African cuisine he had there. I substituted sweet potato for the white, used a can of chicken broth instead of the water, and added a few handfuls of baby spinach before adding the peanut butter and garbanzo beans like another poster suggested. DELICIOUS! Also very easy. We will have this again for sure. Oh, and I didn't have natural peanut butter. I just used Jif and it was fine. I served this over brown rice. Next time I think I'll try it with naan.

French Bread Rolls to Die For

Excellent! They taste just like bakery rolls (and a GOOD bakery, not the lousy grocery store kind). I halved the recipe and used my bread machine's dough cycle to prepare the dough. I had a hard time getting the rolls to double in size but I think that's because it's February in New England and the house is pretty cool. I did eventually get the dough balls to double in size and I baked them about 18 min. They were a beautiful golden brown on the outside (skipped the egg white glaze) and soft and fluffy on the inside. I found these kind of large for dinner rolls, so will make them smaller next time. They will make excellent sandwich rolls too. This is a keeper -easy and delicious!

Maria's Pepper Steak

This was pretty good. I followed the ingredient list exactly, but only had half the amount of red wine vinegar so I substituted the rest rice vinegar. I am not a big meat buyer and didn't realize how expensive flank steak was! Yikes! If I made this again, I'd buy a round steak or something. As other reviews suggested, I stir fried and veggies and meat first then set them aside while I made the sauce. Also, as suggested, I doubled the sauce ingredients. When I first tasted the sauce I was horrified. It tasted very vinegary-soy-y. I put the meat and veggies (I added broccoli) in the sauce for a few minutes before serving and maybe the flavors blended nicely because when I served the dish over rice, the sauce was good. Personally I prefer allrecipes Asian Beef with Snow Peas, but this was a solid 4 star recipe.

Easy, Cheesy Tortellini Bake

I really enjoyed this recipe. I followed the recipe exactly except I increased the amount of tortellini (based on the fact that others said it was too saucy). There was still plenty of sauce for dipping bread in. I also didn't broil the top, just stuck it in a hot oven until the cheese melted. To cut some of the fat, I think next time I'll just skip the melted cheese on top. It would be delicious with out. I know some people mentioned they thought it was too spinachy. I didn't find that to be true. Served this with a green salad and foccacia. A lovely meal!

Lemon Cheesecake

Unbelievable! This cheesecake is SO good. It reminds me of the lemon cheesecake I used to always get at The Cheesecake Factory until the discontinued it. I made only minor changes to the recipe: I added the zest of one lemon, used crushed Nilla Wafers for the crust instead of graham crackers because I prefer the flavor, and I used two eggs instead of the egg substitute. I baked it using the water bath technique described in one of the allrecipes.com articles. This is phenomenal cheesecake. I can't wait to make it again. You really can't go wrong with this. Thank you!

Peanut Butter Noodles

Excellent dish! I didn't have chili paste so I used red pepper flakes. I also added some edamame, shredded carrot, and cubed chicken. I loved it. Next time though I think I'll use something other than udon noodles which were kind of bulky and hard to manage. I will definitely make this again. Oh and this recipe takes no time at all to throw together.

Blueberry Scones

I thought these were great. Not only did they taste good, but they are super easy to make. I did have to make a few minor changes though: 1) I didn't have half and half so I used light sour cream and a little skim milk to equal 3/4 c., 2) I didn't bother to cut the wedges, I just dropped spoonfuls of batter, 3) I increased the brown sugar to 1/3 c. because I like sweet scones, 4) I sprinkled white sugar on the scones before putting them in the oven. Another reviewer mentioned rinsing the frozen blueberries first which I did and my scones did not turn out blue, so I would recommend it. A few people mentioned that the dough was too wet, but I didn't find that at all. This seems like a great basic scone recipe that you could easily vary to suit your tastes. I will make these often. Thanks!

Fried Rice I

This was good. I would recommend using a 2:1 water to rice ratio as opposed to the listed amounts. There was definitely not enough water to cook the rice. I kept having to add water and the rice came out kind of gooey. I opted not to cook in bacon grease because who needs all that fat? So I cooked some bacon in the microwave and crumbled it in. Oh, and I took the advice of another reviewer and just mixed the beaten eggs in with everything. I won't do that next time. It added to the sticky, mushy quality of the rice, I'd rather have the cooked egg pieces or strips mixed in. The only other thing I might suggest is adding a bit more soy sauce. This had a great taste, but the consistency was kind of off for me. I will definitely try it again though.
