Classic Waffles
I like these waffles, but I found them a bit bland and dense. So, I added 3 tsp of vanilla extract, and 3 to 4 Tbs of white sugar, and 2 cups of milk . The extra milk made the waffles less dense and lighter, and increased the number of waffles from 5 to 8, perfect for a family of 4 (2 waffles each). You can also make them ahead and freeze them so you can eat them whenever you want by reheating in the toaster. They're really good for a quick breakfast when you're in a hurry. Just toast, and take it with you because it's already sweet!! I also found that by adding extra sugar, they're sweet enough that you don't need as much syrup or you can eat them as is!!

Peppermint Brittle
These are so easy, relatively expensive, and make perfect gifts for friends and acquaintances. I gave some to my supervisors at work, and they absolutely loved them! I prefer using red/white peppermint candy cane rather than the green/red/white ones. Oddly enough, I could only find them at Walmart.

Stabilized Whipped Cream Icing
My long search is over! I love this frosting. It's absolutely perfect, and if you've ever had birthday cakes from Chinese bakeries, THIS is identical to the frosting on those cakes. It's light, and not too sweet. I will never use butter frosting for my white cakes ever again.
