Buttery Corn Bread

Love it! I had been using a mix from Costco but had bought some corn meal in the bulk section today and found this recipe (I used this one since I didn't have any buttermilk, but that one looks popular too). Ground my cornmeal a bit more using my spice mill, but essentially followed the recipe. Came out fantastic. Easy too. I won't be buying the mix anymore because my kids like this one much better.

Mom's Best Peanut Brittle

Made a double batch. Used already roasted unsalted peanuts and took others suggestions and added them at about 260-270 degrees. Also warmed pans with silpat liners in oven at 250 degrees while candy heating. Pouring mixture into silpat lined pans using two oven mitts was easy and tilting pans using silpat allowed mixture to spread beautifully. Set outside on the patio for a 1/2 hour or so to cool. Easy to peel off mat and break. Very little mess. There were two burnt peanuts I removed with a pair of tongs before mix set. I was going to use a bit of molasses but forgot, so added 1-2 T during cooking process to give color. Worked well for me. One of my kids friends said it was better than her favorite peanut brittle recipe, so there you go. Note on peanut amount - I used just over 2 1/4 cups for double batch. Plenty of peanuts and shouldn't believe I would ever want more than that (I'm a peanut lover!)

Creme Brulee French Toast

I copied the review from Chef Wanda because it fits me to a tee as well. My feeling is that I cut my bread to thick and maybe used to dense of a bread. From Chef Wanda (and me): "I was surprised I did not like this recipe considering all the great reviews. Maybe I will try it again, but I think I did everything as directed. Mine came out semi-soggy and the caremalized part was just gummy and sticky. Overall, a big disapointment."

Banana Sour Cream Bread

This is a delicious banana bread. I've tried a lot of them and this will be the one I make from now on. I've adjusted the amounts here and there due to what I have on hand and it's been consistant every time. I use the toothpick to be the final judge for cooking time. Thanks for a great recipe.
