Milk Chocolate Peppermint Bark

The peppermint extract will cause the white chocolate to seize up - you need to use oil-based flavors especially for candy-makers. I read on another site that this needs to be made with good quality chocolate for the layers to adhere. I used a combination of Nestle's chips and a store brand (make sure it contains cocoa butter) and had no problems. Save some of the candy cane bits to sprinkle in top for color. You need to press them in. Very tasty, will make again.

Old-Time Popcorn Balls

I cut the water in half , used sorghum instead of molassas and added a can of Spanish peanuts. The trick is to cook the syrup a little longer than soft ball but not quite hard crack. It takes away the stickyness. Flavor was lovely and everyone called for more. It helps to take out just the popcorn you can ball up quickly and put the rest in a warm oven. You may need to reform the balls if you make them when the popcorn is too hot, but that's no big deal. Just squeeze them together again.

No Bake Cookies VII

I hate measuring sticky stuff, so I simplified this recipe by using one jar of fluff, one jar of peanut butter and a bag of mini Chocolate chips. I rolled the cookies in powdered sugar and placed on a cookie sheet lined with plastic wrap. These were firm after being chilled a couple of hours, and not at all sticky. I think all the recipe needs to be perfect is a teaspoon of vanilla.
