Bierocks (German Meat Turnovers)

Recipe makes a bunch! I made a full recipe of the filling which was really good then used a can of Grands Biscuits to make just enough for dinner for DH and myself. The rest of the filling froze well, so now I can put together a quick meal using a can of refrigerated biscuits and quick thawing a portion of the filling. I also served these with creamy horseradish mayo for dipping. Really added some nice 'zip' to them.

Asian Coleslaw

We loved the flavor and so easy to make, but beware, the recipe as stated makes a TON! 10 servings is not a joke, at least. Again, loved the flavor and I'll make it again for a potluck, but to just serve with dinner, I threw more than half of it out because it did not keep well.

Unbelievable Squash Casserole

Excellent and easy! I, too, added the about 4 oz of the 6 oz pouch of stuffing mix to the squash/onion mixture and it came out creamy good! The 2 oz of stuffing mixed with the cheddar cheese gave it a wonderful crunchy topping. Highly recommended as a great alternative to potatoes for a side dish!

Cream Cheese Mints

Made three double batches for a friends' wedding. Easy and fabulous. The outsides 'crisped' up while the center stayed fabulous cream-cheese smooth! If you double the recipe, you will need to add up to an additional cup of powdered sugar to get the mixture smooth enough to handle.

Oklahoma Brisket

Best brisket ever and so super easy it was ridiculous! It came out of the oven tender and moist. The glaze was perfect and it didn't need a lick of sauce to make it any better! Looking forward to the leftovers shredded in sauce tonight!

Quick and filling weeknight dinner. The recipe is very customizable; add veggies or don't, it's still good either way. A great way to use up what you have on hand or leftover poultry and veggies before they go bad. What a money/time saver! This one is a keeper.

Gingerbread Boys

Fantastic gingerbread taste (I, too, substituted molasses for corn syrup). Light and perfect. For chewy cookies, roll 1/4" at least, for crisp, roll thinner. I found they were perfect at 8 minutes. I'm throwing away all my other gingerbread recipes. This will be my go-to recipe from now on for the taste alone!

Absolutely excellent! I added some cooked, chopped chicken and took it to a fish fry. It was the first empty bowl on the table! I have made this several times and it is excellent on it's own or stuffed in a pita pocket.

Surprisingly fabulous! I subbed french onion dip for the sour cream. Super tasty and easy to fix. My boyfriend normally does not like any kind of baked chicken, but he absolutely raved about this dish!

Spanish Rice Original

Best I have ever made! I even used instant rice and it still turned out great! Just the right amount of kick and the texture is fabulous and everything is better with bacon, right? The second time I made it, I added 1 lb. of cooked ground beef and came up with an easy one-pan main dish meal. Serve it with corn cakes or warm tortillas. NOM!

Fantastic Pumpkin Bars

I took this to a Halloween Party and it got raves! Very moist and cake like. Don't skip the frosting, it really added the perfect touch to this great fall dessert. Next time I will probably halve the amount of shredded carrots, when you cut the cake, the carrots just string out everywhere which was not so visually appealing.

Baked Mashed Potatoes

I halved the recipe and put a little shredded cheese on top during the last few minutes of baking. Guaranteed NO LEFTOVERS when you serve these. Puffed up a little and were just fluffy and yummy.
