Summer Sausage

Reviewed: Dec. 27, 2007
Oh my goodness. I can't believe how easy this is to make and how wonderful it tastes. Thank you for this recipe. I took 3 logs to Christmas Eve and Christmas Dinner and there was none left. My brother was asking me to make some with some deer meat he had. I will be making a lot of this and putting it in my freezer for a quick snack for unexpected guests. I bought 10 pounds of hamburger to make some so I would have it for New Year's Eve. I think I will add jalepenos to one batch. Thanks again for this easy recipe.

These were very good. I marinated them overnight and the meat was so tender. Might try with green peppers with the onions next time.

Nice recipe. We used KC Strip. Very tasty and very tender. My boyfriend thought it was the best steak we had ever grilled. We will use this recipe again.

Cajun Compromise Catfish

Reviewed: Jan. 29, 2008
I gave this recipe a 3 because of the way it was written. Normally I read the reviews, but this time I thought with these ingredients, you can't go wrong....boy I was wrong. I ended up making 3 batches of the breading (I used 3 lbs of fish, so I had changed the number of servings). Doing the batches on the fly was a pain. Then I had used partially frozen fish, so my breading was basically mush before frying, and letting it sit in the fridge. My recommendations are to double or triple this recipe, use fresh or completely thawed fish, and when putting it in the fridge, make sure it is in a single layer in your pan. By the way the taste of the seasoning, wasn't bad, but wasn't my favorite by far.

Green Rice II

Reviewed: Nov. 13, 2007
This was easy to make and stick in the oven. It isn't a recipe that everyone will rave about, but it is one that you will enjoy at an everyday family dinner. I didn't have any cheese sauce, so I just put some velveeta and a little milk in the microwave and melted. Then added it to the mixture and it came out great. Definitely beats the boxed stuff and worth the very little extra effort. Thanks for sharing the recipe.

Very easy and so much fun! I didn't have anything for the eyes, so I just put a dot of red food coloring, but it ran and it made it look like their eyes had been poked out and they were bleeding profusly. It was pretty cool for Halloween!

World's Best Lasagna

Reviewed: Feb. 16, 2008
Wonderful!!! My lasagna always turned out dry and not much flavor....until now. This was a pretty easy recipe...not much kitchen time....mostly simmering time. Worth it!! The only thing I changed was that I used cottage cheese (24 oz) instead of Ricotta cheese because I didn't have any. Lasagna is my boyfriends favorite food and I hated making it because it never turned out good. Now, I can make it more often. Thank you so much for sharing this recipe.
