Slow Cooker Carnitas

This was AWESOME!! Love the spice combo! I wanted to make a wet rub for the pork, so I used 4 cloves of garlic (instead of powder) and pushed them through a press. Mixed spices (a little heavy on the measuring) with the garlic and about 1/2 of a squeezed lime and the juice of a clementine I had on hand. Stirred it into a paste and rubbed it all over the pork. Also thick-sliced 2 onions and put on the bottom of the crockpot with the bay leaves, and squeezed a few more clementines over it (just because I wanted to use them up!) and cooked on low for about 10 hours. AWESOME!! Thanks for the recipe!

Chicken Fried Chicken

Really good and easy! I pounded out 4 chicken breasts into cutlets, and this was the perfect amount of breading. No seasoned salt, so just added salt and pepper to the flour mix. Had no veg. oil, so I cooked it in bacon grease - just a couple of tbsp. in a nonstick electric skillet. Chicken was really juicy! Thanks for the recipe, I'll be making this again!

Best Ever Banana Bread

Super easy and REALLY MOIST!! I replaced some of the oil with 1/8 C apple sauce and omitted the pecans. This took about an hour and ten minutes in my gas oven. Thanks for the recipe!! Definitely hanging on to this one! :)

Cola Pot Roast II

AWESOME!!! Will make this way from now on. Did a few things different though- had a 2# rump roast so seared it in some canola oil first, then threw in a clove of garlic sliced up and a sweet onion sliced thin, about 8 carrots quartered. Didn't have brown gravy mix, so I substituted 2 T cornstarch, 1 t gravy master, and 2 T water - whisked it up and added to the soup, soup mix and coke.(regular coke for me) Cooked 1 hour at 350, reduced to 250 for 45 min., flipped and cooked another 45-55 min- came out PERFECT. The BEST EVER! THANK YOU!!
