Nice, classic cheesecake. Mine did crack, but I didn't not bother with the water bath-- I figured that it was going to be cut up anyways :) It was smooth and creamy and I thought it was plenty sweet enough. I was a little confused about the amount of graham crackers, I wasn't sure if it was the whole sheets or individual crackers. Obviously it was NOT the whole sheets b/c that was way too much for the crust. Will use those crumbs for a different dessert. Also, next time I would use a 10 inch springform. There was so much batter that the whole thing rose out of the pan during baking and because of this, became a little to o brown around the edges.
