Pumpkin Cake III

The texture was okay, but the flavor was flat ... if I tried this again I'd probably substitute butter and maybe some milk for all that tasteless vegetable oil. I want flavor with my fat calories, darnit.

Honey Wheat Sandwich Rolls

These are great. I actually forgot the salt, but the texture and the crumb was fantastic. We had a highly seasoned filling, so the lack of salt didn't matter so much, but I could tell that, made correctly, these would be awesome. I'm never buying buns again.

E-Z Drop Biscuits

Incredibly bland. Maybe the recipe should specify salted butter, if that's what it requires. I used unsalted, which is what I always use, and thought they were way too bland and flavorless. If I make it again, I'll either use salted butter or increase the salt.

Reuben Casserole

I'm lukewarm on this recipe. Mostly, I'm turned off by the rye bread cubes. They stayed dry and never soaked anything up, nor crisped. Maybe it would be better if the rye cubes were made into croutons first, sauteed until crisp and thrown on top, instead of on bottom? It's just too dry for a casserole, I think.

Zucchini Bread IV

Really good recipe. I've made this twice this week. The first time, I substituted almonds for the walnuts; delish! The second time, I substituted 1 c whole wheat flour for 1 c white flour; just as good. I like the two smaller loaves rather than one large one; that's a plus in my book. Thanks for the great recipe.

Mock Tuna Salad

Really, really good. Doesn't taste like tuna FISH per se, but tastes an awful lot like tuna SALAD as it's normally made; a point that seems to be lost in some reviews. Made this twice this week; had to substitute yellow mustard for the brown and it was still fantastic. A new regular in our rotation. Thanks.

Rose Galletta's Ricotta Pie

I thought the flavor was lovely, but the texture wasn't what I was looking for. I was looking for the dense, cheesecake-like ricotta pies; this was very fluffy and eggy, like a quiche. Maybe I did something wrong; or maybe it's just a regional variation.

Addictive Sweet Potato Burritos

We really loved these. I had to reduce the water to one cup, otherwise the beans would have been far too watery. This may have been because my beans were mashed by hand and pretty chunky. Otherwise, just fabulous. Going into regular rotation!

Veggie Pot Pie

This came out really, really well. I did use a little extra cornstarch and 1/2 t table salt instead of 1 t kosher salt. I had to leave out the onion because I ran out unexpectedly, and used chicken stock, but it was still amazing.

Naan

Pretty good! I halved the sugar, based on some of the other reviews. Cooked them on a dry stainless steel skillet over medium heat. Took some experimentation to find the right cooking time, but they came out pretty good, regardless. Also omitted the garlic and the melted butter.

I ran out of curry powder, so used a few sprinkles of garlic powder instead. Very good! Looking forward to trying again with the curry powder, and maybe omitting the skin.

Lentils and Rice with Fried Onions (Mujadarrah)

Wholesome and hearty, but a little bland for my taste. I added some bouillon to the cooking water, and added some cumin and turmeric to the onions while they fried. Pepped it up a little, but I probably wouldn't make this too frequently.

Slow Cooker Chicken Parisienne

Pretty good! I took note that other reviewers complained of it having too strong a wine flavor, or being too tangy, and with that in mind, I took the lid off the crockpot for the last half hour and turned it on high. I think this allowed more of the alcohol to evaporate, and the resulting dish was milder than previous tastings during cooking. (It also thickened the sauce nicely.) The chicken was very tender, perfect! I'd add more mushrooms next time.

Artichoke Dip I

Really good. Based on some of the other reviews, and on personal preferences, I did some things slightly differently. I used half parmesan, half romano in place of the 1 c parmesan. I used canned artichokes (chopped well) in water to cut down on the grease. I watched it carefully in the oven and took it out as soon as the edges were crisp and brown. Big hit, everyone loved it and asked for the recipe.

Coffeebar Chai

An excellent recipe! Takes moderate effort but the results are worth it. I am not a big fan of the honey flavor and will experiment with sugar next time. Thanks for the great recipe, though -- now I can avoid Starbucks and make it at home!
