Extreme Banana Nut Bread 'EBNB'

Reviewed: Mar. 8, 2014
This is...THE BEST...banana bread I have ever made in my life. And I've tried quite a few recipes. It is EXACTLY like the banana bread every older, female member of my family made when I was a kid: thick and moist and sweet and very banana-y. Love it. LOVE IT. Also, for reference, I followed the recipe exactly; I used six medium-size bananas to make 2 cups mashed; and in all the recipe made three 8X3 loaf pans. Kept one in the fridge and froze two, and can report they freeze and thaw perfectly.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Reviewed: Oct. 11, 2009
Good recipe, but the pancakes were just a little bland. Not sure how I would improve on them--perhaps a little sugar, or cinnamon or something along that line. They also had a slight baking-powder taste so I will probably cut back on that next time. Added blueberries while cooking and that was a nice touch.

Slow Cooker Homemade Beans

Reviewed: Oct. 7, 2009
PERFECT not-baked baked beans recipe. Exactly what I had a craving for. The only change I made was using Goya ham-flavored powder (two packets) instead of bacon to cut down on fat/calories. And, because I own the world's fastest slow cooker, I only cooked it for eight hours on low, and it was already starting to stick to the bottom of the pot. Seven hours probably would have done it. But for a normal slow cooker, the timing in the recipe should be right on.

Delicious Ham and Potato Soup

Reviewed: Jan. 10, 2009
This is the best potato soup I have ever made. I used white pepper in the specified amount and it was a little on the spicy side, but overall it was delicious. I made this to use up leftover ham but I think it would be great without the ham, too. Next time might add a little corn or carrots as well.

French Baguettes

Reviewed: Apr. 3, 2008
This is the most awesome recipe. I made them exactly as directed, and they came out AWESOME. Did I mention it's awesome? Seriously, I made it two nights in a row, and the husband and I have decided that we're never buying grocery-store French bread again.

Fragrant Lemon Chicken

Reviewed: Nov. 20, 2006
Smelled awesome while it was cooking, but tasted...eh. Good, but not as flavorful as I expected, given the aroma. It wasn't bad, just remarkably plain for all the ingredients.

Quick Quiche

Reviewed: Mar. 25, 2006
Very good and very easy. I made it with egg substitute (Better'n Eggs I think it's called), without the bacon, with some spinach, and then another time with turkey bacon--all were good. Very adaptable recipe. Good stuff!

Grandpa McAndrew's Irish Soda Bread

Reviewed: Mar. 25, 2006
A perfect, fast recipe. I've made it twice and it's been great both times. I usually like to fool around with ingredients but there's no need to with this one. Good stuff!

Banana Peanut Butter Bread

Reviewed: Oct. 8, 2005
Yummy stuff! I made the following substitutions: 1/2c unsweetened applesauce instead of butter; 1c Splenda instead of sugar; wheat flour instead of all-purpose. I also used 3/4c peanut butter and 1-3/4 cups flour, as recommended by other reviewers. Also added a couple handfuls of chocolate chips, and made muffins (6 large, cooked appx. 30 mins) instead of bread. Hmm...I'm not sure that this even qualifies as the same recipe, but I used this one as the starting point, and even with some tweaking it was still yummy!
