Colorful Chicken Pesto with Asparagus, Sun Dried Tomatoes and Peppers

This recipe is quick, easy and delicious! I didn't have sun dried tomatoes so I used half a can of fire roasted tomaotes and it is very good. You can't go wrong with this one!

Green Smoothie

This tastes great if made according to directions and I don't think I would substitute other greens unless you love their taste. If you don't have a vitamix, it will be pretty thick so if you want a thinner drink, I'd add more milk and juice. I used almond milk and it was great.

Chicken Pesto with Fettuccine and Spinach

This is a very easy recipe but quite tasty. I added the pesto slowly to my taste as well. I didn't want it to overpower the dish. I think adding fresh tomatoes would have been a good addition.

Raspberry Blackberry Smoothie

In place of ice cubes, you can thin this smoothie with any favorite liquid from juice to milk. I had to strain the drink because the drink with seeds was too gritty. Then, it was smooth and wonderful! For a thin smoothie, leave out the banana.

Meatless Mincemeat Pie

A very good recipe, so much better than store bought. I suggest tasting the filling before adding the sugar because I felt it was just right without the extra sugar. Thanks for sharing this great recipe!

Slashed Sea Bass with Red Onions, Mushrooms, and New Potatoes

I didn't have Chervil on hand and I added the pesto to the onion, mushroom and cooked cubed potato mix. I used a sweet onion, instead of red and I put all of this on top of broiled bass fillets and it was delicious! I will make this again.

Zucchini Alfredo

I used more garlic and since I didnt have fresh basil, I used pesto and the flavor was excellent. I think if you added fresh Roma tomatoes and (for non-vegetarians), some chicken, it would be a complete meal. I also used less noodles or it would have made it too bland.

High Temperature Eye-of-Round Roast

This meat was so tender that I almost thought I was eating Prime Rib. I followed the recipe of 7min per lb and as others suggested, instead of turning the oven completely off, I turned it down to 200 degrees for 2 1/2 hrs. The meat was medium rare and warm to eat. The only way I will ever cook this meat again!

Chicken Makhani (Indian Butter Chicken)

This recipe is easy to make and the whole family loved it. I would use no fat 1/2 &1/2 to make it with less fat. I left out the tomato paste and it was still very good and we served it with brown basmati rice as well.

Stuffed Mega 'Shrooms

A hugh hit at my dinner party! Some changes I made, was to mix Italian seasoned bread crumbs in with the other ingedients before stuffing. I omitted the cheese and Alfredo sauce for a lower calorie dish and everyone loved them. Will definately add to my favorites!

Sherry Apple Pork Chops

Very good recipe but I found that the cut of porkchop may make a difference. A butterfly pork chop was a little on the dry side. Perhaps a little less cooking time would help too.

Burgundy Pork Tenderloin

Very tender meat, it melts in your mouth. I used Merlot but it was a bit strong tasting. I may try 1/2 wine and 1/2 beef broth next time.

White Bean and Lamb Soup

Excellent recipe, my husband loved this and he doesn't even like lamb. I suggest ommiting salt because it is salty enough on its own. I definately will make again.
